It's just a way of organizing data for large projects. If you make an entire short film in Blender, you don't really need USD. But when creating a pipeline that pulls together multiple applications (blender, maya, unreal, substance, etc) it can get very messy managing all the files and data. USD helps you do that in a universal way so any application or process can plug-and-play into your pipeline easily.
I have no idea how people figured this out, but it is all simply amazing.
