If I don't have a smoker, could I bake these? Or would it be better to sear them? I never cook seafood, but like your wife, my wife loves seafood. I do most of the cooking and she would love these.

Bake them on a rack like I used and have something to catch the drippings, so nothing drops down on your oven burners.
