We would have loved to see the Silent Mary go up against the Flying Dutchman. But there is no buildup to it. It would not be as amazing and memorable as the battle between the Black Pearl and the Flying Dutchman in the eye of a maelstrom.
The silent Mary was the best pirate killing ship of the seven seas so one could say it was better than even the flying Dutch man and that's without being cursed, contarary to belief, Davy Jones can be killed but he decided to cut his heart out (you could still decapitate him and all the other men for the Dutch man were still able to be killed, the men on the silent Mary could not
Davy jones was the coolest character by far. Captain Jack Sparrow went from badass to a complete idiot after the 3rd movie. Having the Dutchman (with Davy Jones as captain) fight Salazars ship wouldve been the best way to end it. The whole ending wouldve just been Salazar and his crew being led to the afterlife considering that they they cant take down the Dutchman
The Dutch man can't take them out either since both ships are unsinkable, the ducthmans crew can be killed, salazars cannot unless they get introduced to dry land
