The best restaurants are local/family owned and do not advertise. Here in Texas I just look for the restaurant that the police and service personnel go to. These guys know where to eat.
Thank you, you’re absolutely right! We spoke to a friend in Rome and she said the locals don’t eat in the centre but we didn’t have time to get to Trastevere or elsewhere on this occasion. Next time we will find out where the carabinieri go!
