OMG..!! I made this today, have it in the freezer right now. When I made the banana filling and tasted it... I thought I was in non-dairy heaven. I used almond milk, it came out fine. Lots of thumbs up!

It would be good just to make this just a couple of times. I'd shoot to make this when all the produce is in season therefore it would cost less to make. If you are allergic to cashews, you might be allergic to many types of nuts. See if you can get an allergy test from a physician. Macadamia and blanched peanuts are a good way to make the filling as an alternative, but again get tested so you don't hurt your body. Cheers

Almonds aren't true nuts either, and come from a different plant family again, different from the other two - it's related to peaches, actually. :)
Hi there Ann, I made this today and I used almonds for the crust and almond milk for the filling. It came out just fine. I've also used very few dates (4-5), as I didn't want the crust to be super-sweet, and I mixed the crust mix with tahini (you could use coconut oil, too) to make it stickier. You can adapt the recipe in a way that you like and is more inexpensive, too.
Mulberries can be found at Puritan's Pride for buy one get one free; (and honestly youi could reduce the amount of crust by at least two thirds, if not half. Her recipe has a really THICK layer of crust. Shredded dry coconut is great for adding to crusts and it is cheap!... And you could use frozen cherries which are MUCH cheaper! I buy bulk dry organic figs for $5 a pound. I think hemp milk could work in the recipe or almond milk for sure! I would probably add some lemon zest and almond extract to the 'cake' batter along with powdered coriander seed...I think it would taste more like regular cheesecake that way.

Hmmm.... you can try a nut like almonds... or more dried figs.
flax meal is good with the soaked almonds too. Keep it in the freezer/refrig.
Soaked oat grouts, or Quinoa.
