What’s important, though, is what you put on the bread. I usually put organic peanut butter on mine. Works great. Sorry I can’t be of more help.
I never knew that. I live alone, and I like my bread to remain fresh so I freeze it, and I take the slices out on a daily basis and I toast it . I freeze all my bread, even when I make biscuits. I also freeze my muffins, my pancakes, my waffles. I never knew it lowered the glycemic index and it helps you digest your bread better and prevent sugar spikes. I’m so glad I watch this video.

I save money, and have access to my favorite multi-grain, or rich rye breads, without worrying about it going stale before I can eat it. Now I understand that by freezing it, I actually improve upon it!
I have baked a lot of different kinds of breads in my life; even wrote a book about it. Before you freeze it, double bag or double wrap it. When you want to eat it, take the bread out of the bags and let them come to room temp in the open so condensation doesn’t mess up and soften the crust. If you do this, it can keep for a year and when you thaw it like this, it will taste like fresh bread. Sour Dough and 18 hour low knead breads have a lower glycemic index, as do those made with whole grain flour. When making no-knead bread using cold water yeast method, mix it the night before baking, cover it and leave it in a moderately warm place over night. It should rise for a total of 16 to 18 hours. During the last 4 hours, be sure to punch it down, or fold the dough over on itself at least two times about an hour apart. This will greatly improve the texture and flavor of the bread. The gluten does need to be kneaded at least that much. These breads also have a longer shelf life. Baking bread is such great therapy, and is a chemistry experiment you can eat!
The GI data for breads is all over the place. In general, breads made with whole grain flour, including "ancient grains", have lower GI than white flour. Sourdough lactobacilli can be used in any of these.
Folks, the same thing is true for rice and pasta. Store COOKED rice and pasta in the freezer, and it will develop resistant starch with a lower glycemic index.

I have been doing this & my daughter thought it was strange & that I should just keep in the fridge. I like putting it in the freezer to the toaster or convection oven. Hi, I read somewhere that just putting bread in the fridge is the worse thing to do with it (and I've done that many times in the past). It just makes it go stale faster, as I recall. I'm glad to see your blood sugar has improved.
When I was eating mass market bread,I bought a small chest freezer to store it when it was on sale. I now eat bread from a small bakery that makes it in their store. Much less sugar,and probably healthier.
I first read about this way of cutting GI levels when I was on the GI diet many years ago. Since then, I always freeze my bread and toast it straight from the freezer. It also saves money, as supermarkets often charge less if one buys two loaves of the same make, so it's possible to buy a selection of loaves, add variety at breakfast time, save money and do one's body a favour at the same time, plus no worry about all that bread going mouldy! Thanks for sharing this very useful information, which has taught me a little more than I originally knew about the benefits of freezing bread. I hope many more see this and try it themselves.

Yes! I agree I freeze it..!! Great advice do it. When I get a bag of beans I learned I freeze my rice and beans that are in bags for 72 hours. It kills any little bug that you may not 🙈. I toast or broil toast umm so good!
I haven't bought or eaten white bread in probably 40 years. Whole grain all the way. Rye is my favorite. And I've always kept my extra loaves in the freezer. If it's somehow healthy to do that, great, but freezing is also economical. I'm disabled and can't get out to the stores at all so freezing extra loaves of bread just makes sense. Once the bread is thawed out it tastes just as good as ever. Just keep it in there for weeks, not months, and there'll be no worrying about freezer burn.

Fascinating! Purely by chance I’ve been freezing bread for years. Not for any health benefits of which I was quite ignorant, but because it’s convenient to have a stash of bread in the freezer. I don’t toast it from frozen though but I will now look into doing that. Someone once asked me what to do when you want to use some of the bread that has been frozen. I said just take out what you need and it will thaw in minutes. I rarely toast bread, but the frozen bread is always completely thawed by the time I finish making a sandwich.

Fresh bread that will mold quickly is better than bread that never molds. Freezing bread makes the fresh bread last longer. Great that it seems to be better for you if frozen.
I toast bread at low heat for longer period of time, and it gets you a thicker and tastier crust. Yes, you can do it straight from the freezer, which is even better. I’ve been freezing bread for years, simply to preserve it for longer, it worked fine, and did not ruin the taste, so why not? I did not know about the digestive benefit. Fresh homemade bread, however, will taste best before freezing, of course, but after the first day, it's always better to freeze the leftovers. Instead of freezing, you can also place bread in your refrigerator, it works great.
I make most of my own bread and have been freezing it for quite a few years for purpose you explained. plus, I also buy bread occasionally when its on sale and freeze it. I buy most of my food when its on sale but i have a separate freezer, you can freeze coffee in its container for a very long time, you can save quite a bit of money especially with the inflation prices. .
My mom in the mid fifties went once a month to the commissary when my Dad who was in the Navy sent her his allotment check. She bought most of our groceries then for the month including bread and milk and froze them.
Since I have copd I order my groceries & order 5 loaves of bread at one time. If I still have bread keft over I freeze it. I put it into a freezer that does not have a cycle that defrosts it. Refrigerators that cycle every 24 hours to freeze & then defrost leaves the food with a freezer taste, No matter how you wrap it.
I bake my own bread. It is a MUST to freeze as a 2 lb loaf is waaay more than can be consumed in a week. I slice then freeze. Take out what I want and enjoy.
i usually make a bunch of loaves once a month. i freeze em solid, then vac seal them. they last forever! (not that i need that long to finish it off!) always gotta remember to BREAK THE SEAL before thawing or the bread will 'implode' & fold in on itself, ruining the loaf. only took 1 experience with that to make me learn how to do it properly!
This is wonderful, I can eat white bread without having to worry about blood sugar crashes. I don't think it's too practical to keep 3 monrhs worth of bread in the freezer though!
I've been gluten-free for many years. I have developed some recipes I can eat without issues. It makes a massive amount of sense to freeze bread you aren't going to use in a couple of days and pull it out of the freezer by the slice. You can buy a pullman pan to bake commercial-shaped bread loaves and a box designed to hold a loaf of bread.

Grains and potatoes can go through process except first cook them, then cool and then freeze overnight. To eat, defrost and reheat.

I take my bread and place it in a second bag before freezing. I never worry about freezer burn and when thawed, it always tastes very fresh.

Yay. I recently started doing this because my bread was getting moldy before I got to consume it. Why? I fell in love with Trader Joe's sourdough bread. It's even cheaper than regular supermarket bread. I highly recommend it, however, I don't want them to be out of stock. I buy 3 loaves at a time.
I buy mine at Cosco. Same bakery. About same price.
certain breads freeze better than other types... I've found that sourdough bread freezes the best, which means it tastes just as good after freezing/thawing as it does before freezing it,

Wow, this was an amazingly useful tip. Actually 2 tips, freezing and toasting bread. For quite a while I would freeze bread just to keep it fresh until needed. But now there is a much more compelling reason to do so. Thanks for sharing this!

I back my own wholemeal and wholemeal soda bread and freeze it. It s always fresh and I usually toast it- delicious.

Fresh bread that will mold quickly is better than bread that never molds. Freezing bread makes the fresh bread last longer. Great that it seems to be better for you if frozen.

I toast bread at low heat for longer period of time, and it gets you a thicker and tastier crust. Yes, you can do it straight from the freezer, which is even better. I’ve been freezing bread for years, simply to preserve it for longer, it worked fine, and did not ruin the taste, so why not? I did not know about the digestive benefit. Fresh homemade bread, however, will taste best before freezing, of course, but after the first day, it's always better to freeze the leftovers. Instead of freezing, you can also place bread in your refrigerator, it works great.
We're on Gluten Free at the moment. I was a little heditant to freeze them (2 loaves) . They were still good. The taste was as good as fresh.
I make most of my own bread and have been freezing it for quite a few years for purpose you explained. plus, I also buy bread occasionally when its on sale and freeze it. I buy most of my food when its on sale but i have a separate freezer, you can freeze coffee in its container for a very long time, you can save quite a bit of money especially with the inflation prices. .

I just changed over to 100% Natural Wheat, UNBLEACHED, unprocessed wheat, Sour Dough. I have always Froze for convenience, now health benefits.
Organic wheat is the safeest and best to avoid the glyphosate and other toxins they spray.

My mom in the mid fifties went once a month to the commissary when my Dad who was in the Navy sent her his allotment check. She bought most of our groceries then for the month including bread and milk and froze them.

Since I have copd I order my groceries & order 5 loaves of bread at one time. If I still have bread keft over I freeze it. I put it into a freezer that does not have a cycle that defrosts it. Refrigerators that cycle every 24 hours to freeze & then defrost leaves the food with a freezer taste, No matter how you wrap it.
My bread has always gone straight into the freezer along with other frozen goods brought home from shopping. It lasts longer and tastes better.

I bake my own bread. It is a MUST to freeze as a 2 lb loaf is waaay more than can be consumed in a week. I slice then freeze. Take out what I want and enjoy.
i usually make a bunch of loaves once a month.
i freeze em solid, then vac seal them. they last forever! (not that i need that long to finish it off!)
always gotta remember to BREAK THE SEAL before thawing or the bread will 'implode' & fold in on itself, ruining the loaf. only took 1 experience with that to make me learn how to do it properly!

This is wonderful, I can eat white bread without having to worry about blood sugar crashes.
I don't think it's too practical to keep 3 monrhs worth of bread in the freezer though!
I've been gluten-free for many years. I have developed some recipes I can eat without issues. It makes a massive amount of sense to freeze bread you aren't going to use in a couple of days and pull it out of the freezer by the slice. You can buy a pullman pan to bake commercial-shaped bread loaves and a box designed to hold a loaf of bread.
