Most hobbist swear on the Italian Caputo. I saw it in Calgary few weeks ago, guess should also be available in California. Basically all 00 flour work and mix it with Manitoba after the poolish. Check out older videos from the pizza master. In one he even mentions the flour is not as important as the process and fermentation phase.

Very similar oven than Fatto Fornos in Brazil. Great and easy pizza oven.

There are tons of pizza ovens available. Look for Alfa forni urbe if you want a small electric oven from a known brand.

I tried using cold water and dry yeast. It never works. I do fine with the manufacturer recommendation of lukewarm water. It always works.
