The video for Deep in Love is a mix of multiple live footage but the audio is from one of the concerts. Man in a movie is legit live. I Need Somebody was also taken from an actual live performance but was edited and overlayed with the studio version and that's why you don't hear the crowd.

Regarding your question about instruments: Jae already knows guitar before entering JYP, Sungjin learned guitar only when he was included in the band, Dowoon was recruited because of his drumming skills, Wonpil already knows how to play the piano when he entered JYP, and YoungK already knew how to play guitar before JYP but had to learn the bass from scratch because Jae was already assigned to play guitar.
