Hey boss, been a follower for like 6 months now, big island. I like the way you fillet your fish. Since i saw your gill and gut video recently, i figured id give a few tips, since i picked some up from this video. If you cut both channels along the inside of the gills but on the collar side, and then cut the brimbone (there is a little notch you can feel that the knife will slip into, do that both sides. Cut belly from ass up enough to get the asshole out enough to cut off the doodoo tube. As long as you cut the first layer of skin back around on the inside of the collar, grip the gills and pull and you can pull all the guts gills out one crack and can just pluck the heart

Halibut are so much easier to fillet. People should not gripe about shooting big fish. It is safer for all concerned. When I lived on Kodiak Island you could tell how well the big halibut were biting by listening to all of the gun shots. We had three guys in a 17’ Boston Whaler and a 140lb halibut. There was only enough room for three living things in that boat. There was no way that fish was coming into the boat alive. I think it is weird that the first living thing I shot with my new .44mag was a fish. Man that shot was a lot louder than I thought it would be. All three of us had ringing in our ears for hours afterwards....

Properly done, really great to see you take the time w da knife...got to show plenty respect to the harvest. I lived in Haleiwa for 10yrs, currently in FLA on a barrier Island and I have def seen some hack jobs on Big tuna. I don't think the way people perform a hack job is only confined to Florida, but it was in Hawaii that I really saw the care and the love given to the fish as it's fileted. Got to keep them super cold, the brine is critical and you're so right about shooting them, any negative comments about shooting those big fish just show a lack of understanding and experience. You were definitely taught very well, give me the collar and the belly all day 😁🤙🏼🤙🏼🤙🏼
