I wonder when Piranha Plant Cove comes to the Booster Course Pass, if they’ll reuse the Maw-Ray from Dolphin Shoals or use the old design/Tour Maw-Rays
There are Maw-Rays in Daisy Cruiser and Koopa Cape. Those will definitely be the ones used in Piranha Plant Cove. They use their Tour design, as expected.

My personal favorite of the three routes, I just love the calm underwater vibes present throughout. I expect we'll see this in 8DX in Wave 5.

Do you mean its design? The Maw-Ray in Dolphin Shoals is huge and acts completely different. Do they even have different designs?

Yes very first track in Mario Kart series fully underwater, so relaxing and peaceful!
