      Ristoro dal Patriota. The first meal I ever had in italy. Was not terribly hungry due to the jet lag. The waiter suggested. Fish. And I just asked for a salad with it this was an entire grilled turbot With a salad that filled an eighteen inch pizza pan. Sitting outside 2 blocks from the trevi fountain that is how you make memories. absolutely wonderful meal, incredible experience and I will be back next trip.

    Carbonara is probably my favorite pasta dish. I remember the evening my husband proposed to me, as it was on a walk we took after I made him a huge meal of carbonara, but since he didn't have any dried pasta, I made the pasta from scratch in his kitchen. Now, we're expecting our first child in about seven weeks, and I can't wait until the little one is old enough to fall in love with carbonara too.

      Well carbonara is not an old dish and still evolving within italy. Romans tried alot of different stuff earlier like garlic etc before. Alot of good chefs mix pecorino and grana padano or parmigiano aswell.

    Excellent video, thank you. I feel like all of the carbonaras were amazing for different reasons. They all had excellent ingredients, kept it simple, but varied slightly in technique. I can't think of another recipe with just five ingredients that can come out so beautifully. Everyone should be making this!

    When I went to Rome a couple of years ago, I had the best Carbonara in my life. It was a small restaurant, maybe 10 tables at most, hidden in a tiny street. When you walk next to it, you could see an italian Nonna sitting in the front window, literally making all the Pasta by hand! One of the best meals of my life.

    Vincenzo, your 2023 carbonara looks excellent and, by looks, keeps getting better and better with every new videos you create and upload.
    Please try Ristorante Abruzzi in Rome (closed Saturdays) near Piazza Dodici Apostoli. In my opinion, it is the quintessential carbonara (made with rigatoni). The guanciale is crispy. The quality is on such a high level that it’s extremely difficult to replicate. My guess is that the restaurant has a secret technique or method that they do not tell the public. I would say every authentic restaurant in Rome has their own secret methods for preparing their own version of carbonara. I myself want to know the secret touch.

    I made my bestie carbonara one night when we were staying at a hotel near Little Italy in San Diego. Limited kitchenette, but sourced my ingerdients from a little Italian market around the corner. Guiancale, spaghetti, eggs, olive oil, parmisana (there was no grater in the room and that's all that was pre-grated in the shop). She LOVED it and took leftovers to work the next day and texted me that it was still awesome. I was winging it and wanted to make something for her to thank her for inviting me on her business trip. So few ingredients, horrible kitchen utensils and cooktop, but beautiful results. 10/10.

    I went to Rome in 2015. Directly to the left of the Roman Pantheon (if you are facing it head on) there was this pizza place that had really good square shaped pizza's that they fold and serve to you like a sandwich. The have a very liberal selection of flavours that you wouldn't expect in Italy (but perhaps Rome is more innovative than I'm aware of). I swear one of them was carbonara and it was soooooo delicious. One of the best I've ever had.

      Well said. Rome has really perfected their cuisine especially they carbonaras. They are known to have amazing Carbonara dishes that everyone surely loves, the richness and the depth of flavor these pasta dishes have are superb in Rome. Some of them even use high quality eggs like those from cruelty-free farms which makes the egg taste amazing! Thank you for sharing your experience with me. I love it.

    Love your way of presenting basic food as what it is - simply good!
    Learned from your (and others 😬) to make Carbonara. Whenever I get Guanciale I go for it.
    But i made it with Austrian Bacon and Austrian hardchesse - and it tasted like Austrian Carbonara.
    Same with Swisse Bacon and Chesse.
    So this is a lovely dish you can give your local flavor - but always do it the right way. The cooking procedure is tje same!
    So, Carbonara is a great Ambassador of the Italian way of cooking!

    My pasta cooking has improved so much since I started using your techniques. Just adding the pasta water to the sauce and then the pasta itself (and not having the pasta and sauce separately) has made SO much difference. I also use the whitest pasta I can find here (tastes much better than the caramelized ones) and buy real pecorino which our cheese shop imports from Italy. I haven't had any luck with getting guanciale from our butcher shops yet though, I might need to order online. I can't wait to try the real deal.

      @@vincenzosplate I found real guanciale and used it to cook Carbonara exactly like your "approved by Romans" recipe with the whole eggs. And I must say, wow. Wow wow wow. I didn't think guanciale would make that much of a difference but it does. It has a subtle but very distinct flavour. Everyone loved it! It's quite hard not to burn it though. I found that even on a low heat the fatty part hadn't molten completely before the lean parts started to burn. Luckily I had bought enough guanciale for 2 dishes so I could start again with narrower strips and that worked a lot better. So in the end it all worked out and we had the best carbonara we ever had! Topped it off with your Tiramisu recipe with eggs and real savoiardi biscuits (and some added ricotta for a bit more substance) and we couldn't be happier ♥️♥️

    What I loved the most aside from the beautiful pasta that I wanted to eat all the way, was the beautiful architecture of that historical city in the background. That city exudes human history in the most elegant and beautiful way.

    Wife and I visited the north of Italy a couple of years ago and we played a game: Finding the best carbonnara and the best pizza in italy. After visiting 4 majors cities and a couple of day trips in smaller cities, we arrived at that conclusion: Best carbonnara we had was in Milan in a small restaurant near the Darsena. Best pizza was in Rome in a small pizzeria named Loffredo, very far from the city center, but close to our bed and breakfast. The owner was simply lovely and would grab a glass of wine with us simply to have a chat in the little english he knew.

      The pizza gets better as you go south. Carbonara is truly a Roman thing. My favorite city in the north for food is definitely Bologna.

    I think something may have got lost in translation. It is carotenoids that make the yolk dark orange. Carotenoids are found in marigold flowers which are commonly fed to chickens in Europe, because of the various health benefits they provide to chickens. They are a source of pyrethrins, which protect the animal from pests.
    But carotenoids are also found in carrots, so I could be mistaken!

    Mama mia! Offer me a trip to Rome with a free visit of at least one museum or ruin EVERY day and I'll politely decline. Offer me a trip to Rome with a free pasta dish or pizza etc every day to be enjoyed people watching from some restaurant or with take out and I'll be there. My hubby plays piano/organ so well, I like the music to your video, and for dinner, he stuffed his pie hole with Amertriciana style (forgive my spelling) pasta with paperadelle, it was too spicy for me but still a wonderful dish....I prefer creamy pasta HAHA! I love when he gets tomato sauce all over his face! We bought a so sad "parmasean",so weak, I hope to try peccorino sometime! The most painfull appetizer I had to prepare was the tagliere for 2....it took so long, even with my proficiency with a meat slicer!!! I hope you mind your cholesterol after so many dishes! We need you around for more bellisimo videos 😅

    Let me know, Vincenzo, when you're going to organize a culinary tour to Rome/Italy. My favorite carbonara restaurants in Rome: l'archetto and L'Abruzzo, both are a short walk from the Gregorian University (a 100 yards more or less). Love Rome! Love Italy!

      @@vincenzosplate Okay Vincenzo, I'll add that l'Archetto had a particular pasta dish they called "Il bomb", which I enjoyed many times. In the Abruzzo, they offered the very best carbonara I ever tasted. Then I usually would follow up with maialino (?) al forno, baked piglet. You could eat it with a spoon. Now I did invite some American friends visiting in Rome to try it, but they could not stand the sight of the piglet (I made a mistake!). Too bad. We Americans want our food in a McDonald's wrapper. But I can recommend both places to you. There are other magnificent places... Would love to revisit. Italians know how to eat well and inexpensively. Thanks for so much, Vincenzo. I'm here in Maine, New England, and do the best I can to make a carbonara as you teach us in the US. Can't be done with the food I have here in the back woods. But, I am grateful for your coaching. My friends and I enjoy the best carbonara in Maine (using unflavored bacon and parmigiana, the best I can do). But it's nothing like Rome, Italy. Cheers.

    What I like to do is use a really good salami (when I don't have pancetta on hand. Sorry Vincenzo. I PROMISE when I buy a home and a good smoker, I'll lear how to make guanciale!😊) and fry them in a splash of really good whiskey. Cooking on low heat will allow the drying meat to absorb the flavors of the alcohol while the pasta cook. And the trick I learned : add that sweet, sweet meat juice to the eggs to get the cooking process going! Thank you again from Canada, Vincenzo. Should we ever meet, drinks are on me! ❤
