The food at the Night Market is insanely good b/c due to the high amount of traffic and people in Taiwan the food industry in super fierce! Those who are successful as Night Market vendors are typically those who will pursue opening their own restaurant as rents are extremely high and few restaurants will make it to their end of their rental lease.
All well and good , nice pictures , great food ! All that is missing is where to find these markets , all over Taiwan . I did my best in 6 months in 2020 :-) 6 mins on chopping sausages is way too long !

There was one place my wife took me. I want to say Hualein but I am probably completely off. This one food that I called deep fried egg taco was basically a big boiling pot of I guess oil. Lady threw in an egg into it and then souped it up with some type of bread/naan or something similar to a soft taco. Threw some grounded spice on it. Man I tell you that was probably the best thing I ate in Taiwan. Had like 3 of those in 2 minutes. I saw some people literally buying bags of these things. Stomach destroyed me later but was totally worth it. Would have to ask my wife what it was again.
