One thing that I missed in the video is that, the file viewer is not compatible with SharePoint mobile app and it just shows the link to the file. This to me is a deal breaker.

I tried Quick Chart. Quick Chart has a limitation that it needs data for display in numeric format only. So if your list doesn't have numbers it won't even show up in the available list. It won't display any counts of repeated texts in columns. Is there any other alternative to quick chart or file view which is completely online?

So in same site collection using in SharePoint Online, why the Quick Chart is not showing all the lists which have few numeric data too? This is just showing one of custom list which I have created? Please suggest for the same. Also, does anything got changed in the chart/graph offerings in SharePoint Online till now to provide out of box?

There are many ways to do that. I personally go for Powerapps and show the consolidated result in Powerapps webpart.
