Three Healthy Meals for One with only a handful of ingredients

  • Figuring out what to make for dinner can be SO challenging - especially when you're cooking for small numbers. The next time you’re cooking for one or two, try these three EASY 10 minute meals!
    You just need a pre-cooked chicken breast and a handful of things from the produce section to rock a Speedy Veggie & Chicken Stirfry, Taco Tuesday, or an amazing Comfort Food Italian Chicken & White Bean Soup.
    They're all so simple to make, super-delicious, low carb, gluten-free, and low in WW(formally Weight Watchers) Smartpoints too. In the video, I give lots of different ways to adapt these simple ingredients for different tastes. Plus you can easily scale them up to feed a crowd!

    Speedy Veggie & Chicken Stirfry - 3 SP Blue & Purple and 6 SP Green
    1 tsp ginger
    1 tsp garlic
    2 cups sliced veggies
    1 grilled chicken breast
    3 TB stir fry sauce
    1 cup cauliflower rice
    2 sliced scallions
    Taco Tuesday! - 4 SP Blue & Purple and 8 SP Green
    1 grilled chicken breast
    1/4 cup salsa
    1 tsp cumin
    2 corn tortillas
    lime
    1/4 cup fat free Greek yogurt
    1/2 cup cole slaw mix or shredded cabbage
    2 sliced scallions
    optional cilantro and hot sauce
    Comfort Food Italian Chicken & White Bean Soup - 2 SP Blue & Purple and 7 SP Green
    2 cups chicken broth
    1 grilled chicken breast
    1/2 can diced tomatoes
    1/2 can cannelini beans
    1 cup frozen veggies
    1/2 tsp Italian seasoning
    1/2 tsp granulated garlic
    2 TB grated Parmesan

    Yes I will start canning up my beans easy meals and having frozen rice bowls on hand for fast and easy meals.

    Hi Julie, thank you for your amazing recipes. I cook for one so I watch my food budget carefully. I buy frozen stir fry vegetables on special, always have frozen onion, fresh corn off the cob (steamed and frozen), spring onions (green onions) cut with herb scissors and frozen. I buy capsicums (peppers) on special, cut and freeze them so l always have vegetables on hand for a stir fry. For chicken (I don't eat meat) I will buy chicken breasts (or tenderloins) on special, cook them in an instant pot or airfryer and freeze them in meal size portions. I keep all my asian sauces in the fridge once opened and I do use crushed garlic (also buy that on special). I find I am able to do a wide range of meals so, as you said, I am not eating the same meal for 4 nights in a row. I only use spray oil as I find that goes much further and pouring oil from a bottle. I hope this helps your viewers, who are finding food so expensive now. If I want to extend the meal to 2 serves (I also have a sister who lives on her own opposite me) I will add noodles and this makes enough for the two of us. Please continue on with your great work.     My go-to garlic is crushed/minced jarred garlic from my local Asian stores. It's much finer than the minced garlic in regular stores and has a better flavor (and can often be found with the only preservative being citric acid). Very helpful video!

    Great idea about keeping the pre-chopped veggies from going bad . I hated seeing cilantro go bad before I got to use it all. If you chose the whole bunch after washing it. Then just leave it out on a kitchen towel until it is completely dry. Chop up what you want to use and put the rest in a plastic bag with a paper towel and it will last for a really long time.
