Hello to Andre, I’ve been enjoying your videos everyday. I’m from Bukidnon but currently live in Canada. I suggest that Mama Olga marinates the fish with calamansi, soy sauce, ginger, garlic, pepper. This marinade goes well either any fish including boneless bangus. You can use some vinegar. This marinade removes the fishy smell. You can coat the boneless bangus with flour before frying. Pat fish dry before coating with flour. Also you may try cooking Filipino breakfast-garlic rice, Longganisa , pork giving, beef tapa, eggs over easy, salted egg (pink) and drink local native chocolate drink. Use evap milk for chocolate. Add a tsp of peanut butter if you prefer. You can buy pure chocolate tablia there.

The small fish are anchovies or locally called as dilis. Good to be made as fish fritters or fish okoy. Just mix it with chopped onion and garlic and equal part cornstarch and flour, egg and water to bind into pasty consistency. Shapecinto mini pancakes and fry till crunchy. You can alsp do paksiw wrapped in banana leaves. Just toss in chopped onion, garlic and ginger and simmer it in equal parts water and vinegar.
You can tell the sellers were laughing at themselves because they are not used to speaking English 😂. The guy was trying to explain the fish's name was "Bato" and he pointed his finger saying they got those fish in bato meaning stones and then 2 sellers looked at each other and laughed because the guy struggled a bit explaining in English😂. Wow! I love it when my dad cooks Paksiw using small fishes (though you can use any fish for paksiw). When we have blue marlin, he would marinade it in a mixture of calamansi and soy sauce (you can add pepper) and put it on the grill. You're so lucky to have access to very fresh fish!

Suggestion in cooking the small fish (bulinao) mix fish, onion, tomatoes, minced garlic, eggs, flour or cornstarch, salt, black powdered pepper in a bowl and fry just like hotcakes. Yummy dip with vinegar wd garlic.

You can wrap the small fish with banana leaves approx 3x3 inches depends on how large you want. Then cut few pieces of tomato and onion and place it at the bottom of the pot then place the fish you wrapped in banana leaves on top of the tomato's and onion add 1 1/2 cup of water just enough to cover the fish add salt then let it simmer for10-30 min or until the water is reduced. Enjoy. We call it pinais na ISDA, you can add Dried kamias and it will become pinagat :-) you can do that in almost all types of fish for big fish you don't need to wrap it in banana leaves.
May I suggest that when you buy fish you choose this fish like; tuna, yellow fin, tulingan( avoid this if not fresh) mantis, liplipan, tangigi, lapu2x (size should be 1/2kg each and up) matambaka, lagaw, danggit and katambak. And pls avoid this if possible; balo(like the long one you buy) it has greenish/blueish bones and a lot of it. Tambasakan, catchers fish (you can ask locals about it).
Please try next time cooking the small fishes ( wash n clean well) put flour and cornstarch , season with salt , black ground pepper and garlic powder , add 1 egg if desired. MIX well and good. And fry maybe 2 tablespoon , fry til crispy. it's yummy.

You may want to try the Tortang Dilis recipe below, but there are plenty of YT videos for dilis recipes. Kids would love it since it would be so tasty and crispy as well. You may want to try Paksiw na Dilis as well. Enjoy!😊 I agree with others that fresh fish is better with just salt and some pepper then fry. Then dipped in toyo with vinegar( or calamansi) and onions and chilis. Big fish like lapu lapu is good when steamed with some spice leeks, onion/scallion, ginger. Or escabeche lapu-lapu the one with sweet n sour souce on top. Other fish to try would be deboned daing na bangus marinated in vinegar with lots of onion and pepper, then fry good partner with mongo. While you're here in the Philippines you may want to try many kinds of fish and seafoods. There are lots of recipes in YT. Also, you may want to cook other dishes just like the ones you cook in Russia, like pork adobo, pancit, sinigang etc since you are here and the ingredients are available, it can help you hone more your culinary skills on Pinoy food so when you get back to Russia you can share it with your family and friend. Hi Andrie i know that fish bcoz i grow up with our fishingnet we called it in bisaya "Baleng". Balo -you can cook tinola or sinabaw with ingredients.onions, kamatis,ginger and lemon grass. Lemon grass is good to lower blood pressure. when you boil with lemon grass wait until the color of water is yellow or green when leaves is fresh. you can add green leafy vegetables like malunggay or pechay You can also fried or prito the Balo fish. Dilis/Anchovy fish- you can cook it torta .removed the intestine. in small size of palm not so thick so make it crunchy.

Suggestion in cooking the small fish (bulinao) mix fish, onion, tomatoes, minced garlic, eggs, flour or cornstarch, salt, black powdered pepper in a bowl and fry just like hotcakes. Yummy dip with vinegar wd garlic.

Andrei, Lapu lapu is very tasty fish, good for Escabeche dish.
You can wrap the small fish with banana leaves approx 3x3 inches depends on how large you want. Then cut few pieces of tomato and onion and place it at the bottom of the pot then place the fish you wrapped in banana leaves on top of the tomato's and onion add 1 1/2 cup of water just enough to cover the fish add salt then let it simmer for10-30 min or until the water is reduced. Enjoy. We call it pinais na ISDA, you can add Dried kamias and it will become pinagat :-) you can do that in almost all types of fish for big fish you don't need to wrap it in banana leaves.
May I suggest that when you buy fish you choose this fish like; tuna, yellow fin, tulingan( avoid this if not fresh) mantis, liplipan, tangigi, lapu2x (size should be 1/2kg each and up) matambaka, lagaw, danggit and katambak. And pls avoid this if possible; balo(like the long one you buy) it has greenish/blueish bones and a lot of it. Tambasakan, catchers fish (you can ask locals about it).

Please try next time cooking the small fishes ( wash n clean well) put flour and cornstarch , season with salt , black ground pepper and garlic powder , add 1 egg if desired. MIX well and good. And fry maybe 2 tablespoon , fry til crispy. it's yummy.

I agree with others that fresh fish is better with just salt and some pepper then fry. Then dipped in toyo with vinegar( or calamansi) and onions and chilis. Big fish like lapu lapu is good when steamed with some spice leeks, onion/scallion, ginger. Or escabeche lapu-lapu the one with sweet n sour souce on top. Other fish to try would be deboned daing na bangus marinated in vinegar with lots of onion and pepper, then fry good partner with mongo. While you're here in the Philippines you may want to try many kinds of fish and seafoods. There are lots of recipes in YT. Also, you may want to cook other dishes just like the ones you cook in Russia, like pork adobo, pancit, sinigang etc since you are here and the ingredients are available, it can help you hone more your culinary skills on Pinoy food so when you get back to Russia you can share it with your family and friend. Google is the key and YT has many tutorial videos too.🙂

Hi Andrie i know that fish bcoz i grow up with our fishingnet we called it in bisaya "Baleng".
Balo -you can cook tinola or sinabaw with ingredients.onions, kamatis,ginger and lemon grass. Lemon grass is good to lower blood pressure. when you boil with lemon grass wait until the color of water is yellow or green when leaves is fresh. you can add green leafy vegetables like malunggay or pechay
You can also fried or prito the Balo fish.
Dilis/Anchovy fish- you can cook it torta .removed the intestine. in small size of palm not so thick so make it crunchy.
Lami kaayo na kuya Ang ballo.lami na e fried or utan.
Fish and Tortang Talong are good combination with ripe mangoes ohhh sooo GOOD🥰
The small fishes is called Bolinao..u can cook them paksiw..bolinao soup (tomato,onion,ginger and horse raddish called malunggay its a healthy viand already..tortang bolinao and kinilaw n bolinao..or u can cook it wrap in dahon ng saging for paksiw..just a suggestion only❤❤❤❤
