Is China's Most Famous Restaurant Worth the Hype? Goubuli "Go Believe" Review 狗不理

  • Goubuli baozi, also known as Go Believe, is arguably the most famous restaurant in China. Established in Tianjin in 1858, it really became famous once everyone knew about the Dowager Empress Cixi and Goubuli connection. Empress Dowager Cixi of the Qing Dynasty was said to have loved Goubuli baozi, so much so that she would have its chefs bring the food to her in the Forbidden City.
Today Goubuli baozi is one of the longest running chains in China. Beyond the Goubuli flagship location in Tianjin, Goubuli has many other locations now. Not only is Goubuli in Tianjin, but you can also find it in many other cities, such as Beijing and there is even a Goubuli Canada location! If you are in the west, you can hit up Goubuli Richmond Hills, ON location.
Due to its famous status though, Goubuli has its fair share of critics. Many claim Goubuli is overrated and Goubuli is a tourist trap now. It is after all twice as expensive as most bao restaurants, and many Tianjin locals do not believe it is worth the price. While in China I just had to stop by then! I will answer the question of whether or not Goubuli is legit or not or if it's just another overrated tourist trap riding off its history and its fame!

Well done UA as usual. Can you review the legendary Berns Steakhouse in Tampa soon? Pro tip when you go: Make sure to save room for the dessert room, so order a steak around 10oz or under

Was not expecting to see someone mention my home town haha. I personally think Berns is a bit overrated but you mainly go for the experience. There are definitely better steakhouses in Tampa.

You are right about the steamed buns. Depending on the restaurant. The buns can have compacted meat and or thick dry dough. I have only ate steamed buns once here the USA. And unfortunately that was the case.
I actually prefer dumplings. But unfortunately sometimes the dough is too thick with compacted meat here also.
A number of years ago. I visited Beijing a couple of times. I ate in a small steamed bun shop. The buns were perfect.
I have also visited Hong Kong a number of years ago. I met a local chef. She took me to a very large restaurant that basically only served dumplings. It was rated one Michelin Star. They had so many varieties. And so delicious.
As for the restaurant. To me the decor looked kind of touristy. But everyone has their own opinion.
What’s most important is the taste and quality of the food.

From my experience, New York and the rest of America cannot replicate a lot of food items found overseas. While America is great for the food choices, the quality is not the same for a lot of dishes. Which means you really have to get up and hop on an airplane if you want the best .

I'm biracial Chinese and have lived in California my whole life as have most my Chinese relatives going back to around the 1840's we think. When I was a kid, going back to the 80's, my grandma and great aunt would search out restaurants owned and operated by chefs from Hong Kong specifically for the most authentic Chinese food available and steamed buns were a favorite thing to go out and get for lunch. I remember as a kid there was this restaurant that made their own bbq pork buns from scratch that were amazing, super fluffy with diced up saucy bbq pork on the inside and they were big. Kid me needed both hands to hold them. They also had these steamed buns filled with either sweetened black bean or red bean paste that were super flaky, it was like a folded dough from the region the chef came from in China, I've never been able to find them anywhere else.
So it does exist...but in my experience you need to know someone that speaks the language and cuisine to find the good stuff. My great aunt ran a chain of Chinese buffets and would go to Hong Kong a few times a year to scout chefs. It was kind of funny looking back because the buffet was standard American Chinese but for the real Chinese customers they had a secret menu to order off of with the authentic good stuff so that's what I grew up eating. Unfortunately my Chinese side didn't have many kids and didn't teach me the language so they've all pretty much died off and now I can't find that food anymore, which is sad. At least I have memories.

A Tianjin native told me that Gobuli is a state run restaurant so it doesn’t matter whether people like the food or not, the restaurant’s bills and staff will get paid. The privately owned restaurants have to compete for business, and they will take more care with their food than Gobuli.
The restaurant is considered expensive locally.

Great review. My sister's husband was born in Tianjian and he swears by their buns. He said there hasn't been another bao place that he has been to that makes buns with filling that is so fatty, juicy, and flavorful as Goubuli. Other dishes are hit or miss according to him, but you can't go wrong with the baos. My sister's husband hasn't been back home since he left to attend college in the US, but they're planning on going back to Tianjian this October. I'm hoping they'll let me tag along so I can try Goubuli and all the other great food in that area.

I love a good steamed pork bun. Yes, they are usually disappointing in the US, exactly as described, a hard dry meatball encased in an almost stale (how could that be if it's steamed) bun. I've never been to China, and what I get in Japan is obviously not Chinese, but in the Kansai region people are addicted to these light, fluffy buns filled with juicy oily pork, the preferred condiment is sharp mustard. I have to agree with some of the critics of the restaurant's decor, not because it is too gaudy, but because it really does not evoke any 19th century architecture to me, it is a very generic cheap tacky developer architecture tarted up.
