Chain sawing tip: don't stop the chain before removing it from the tree/log - keep it going until it is out. This should reduce it getting stuck and you having to tug on it to get it out.
You should have a really good first aid kit in the tent and then another trauma kit on your person. If anything were to ever happen where you became stuck it would be good to have first aid close at hand. Also I recommend a garmin emergency communication device be on your person for the same reason. I know this all costs money but you are out there alone. Better safe than sorry. Keep up the good work!

You’ve obviously gotten stronger with all this work you’re doing. I found you this weekend and binged yesterday. I wonder, has anyone told you about the log calculators you can find online? You put in your log dimensions (big end, little end, length) and it automatically gives you a plan that will come out as level as possible.
If your budget allows, a log peeler attachment for your chainsaw would make things go much quicker. And probably more of a personal choice but I would suggest clearing all of that debris around your debarking station to avoid tripping or rolling your ankle. A clean workspace is a safe work space.
Rénove the steak , empty the pan from all the liquide grease, wit for the pan to go up in temp, put the steak back. Always start your steak at high temp
For the cooking side of it make sure the oil is hot let that come to a slight bubble, canola oil is good as it's got a high smoke point and perhaps bring a bit of butter to put on it next time with some rosemary and garlic that's optional though salt and pepper is needed
a couple tips for top notch steak: Dry surfaces brown and create a nice crust. Pat your steak with paper towel until really good and dry and then season with salt... ideally you would leave it uncovered in a refrigerator over night to get the surface really good and dry, but even just an hour makes a huge difference. Once dry, oil up the steak really good and then salt again. Preheat the hell out of the skillet with no oil in it on max heat for a good 10 minutes. After preheated, add some oil to the pan and drop your steak in. I like the flip once per minute method, but some people just do a few minutes each side. I use an instant read meat thermometer and shoot for around 110-115F... once it reads that i turn the heat down and throw some butter and herbs into the pan and then tilt and baste for a few more mins until you read around 120-125. Pull it and rest it for about 10 mins and carry over cooking should get you up to 130-135f for something on the rare to medium rare side. Enjoy!

You only need a light sprinkling of salt. You can always add more when eating. As for the amount of oil, for a steak that size, a spoonful should be enough. It will spread out and followthe heat in a hot pan. Alternatively, put half a spoonful on one side of the steak and rub it around with your fingers. Flip and repeat on the other side. Place the steak into the pan. Dont move it or touch it. This will allow a golden brown caramelisation form on the surface of the steak. Never use a timer for steak outdoors. The outdoor temperature will affect the cooking time. Instead, watch the sides of the steak. Wait until the 'brown' of the cooking meat comes up halfway up the sides of the steak. Then flip. Wait for the brown to meet up and cover the side fully. Remove the steak from the pan and wait 3-4 mins. Enjoy your med rare steak.
You should build a small sled designed to work with your winch to make lugging all the tools and materials up the hill from the boat much easier. Just like a clear straight path, maybe with some kind of rails or maybe on the ground, and a sled with walls yo hold everything in as it goes up. That way you only need to carry the winch to the top of the hill by hand, and then the rest is easy.
Consider adding wedges under your lower logs to keep them from rolling or sliding once you start piling them up. A pyramid of logs can get dangerous if they slip and roll toward you.

Get some little €5 can of spice blend, it can be pretty much whatever as long as its got black pepper and garlic. Seasoning more will also help atain a light char better
In your tour of the island video, you asked for suggestions I have one main suggestion that will save you a lot of effort as long as you are felling and moving trees. Get or make a log skid. If you buy a purpose-made one, it will look like the nose cone of a rocket with a hole in it, but you can make a decent one out of the hood (bonnet lid) of ascrapped auto. The cable from your winch goes through the hole that's in the curvy part to attach to the log. The curved metal makes the log glide much more smoothly over obstacle that it would normally snag on. You trim the limbs where it falls but drag the whole logs to a processing site by your cabin. You should be able to drag 2 or 3 logs at once, if they're not huge. You should be able to get some good pointers from the playlists of "The Outsider" and "My Self-Reliance" on TH-cam. Wranglerstar used the hood of an old car in removing deadfall and felled trees to maintain his forest.
Before the snow comes you should videotape the entire ground, it will be a lot easier to navigate and pushing the logs knowing there aren’t any stones or stumps the tree might get stuck on

Get the pan hot, place the pre-seasoned steak in the skillet, and don't flip it until it is ready to flip. It will stick to the pan when you put it in. When it comes loose with a nudge, flip it. When the 2nd side comes loose, put it on a plate for about 4-5 minutes before you cut it. A juicy steak should be your end result. My wife says the best steak she ever had was from a cast iron skillet over a campfire that I made her. She was probably just glad that she didn't have to cook over the open fire and smoke.

Rather than felling trees distantly -> moving them -> debarking them -> then drying them, you should Fell->Debark->Dry->Move. This means you move them when they weigh the least, you just need regional debarking and drying locations around the island.
Looks like you cooked a steak! Good job. Id eat that. If youre gonna oil the pan, let it get ripping hot. Like smoke coming off it. Hot pan is the key! Doesn't mean the temp setting needs to be blasting, just let it get up to temp longer before the steak goes on.

I have a suggestion for you to consider. Google goal zero skylight. It's an area light that can be extended 12' ( 3 meters ) high. With 4 brightness setting. In order to use the highest setting (6000 lumens) it can be plugged into any power bank with its car adapter that comes with it. It's spendy at $300 usd but it will be benefit you when you run out of daylight while you're working on your projects.
By the way, be careful when choosing trees. The trees on the shore of the island are holding the soil in place with their roots. Once they're gone the island will begin to erode by the river constantly witling away at it. If you need to use those trees, then do what you must since their stumps and roots may still hold the shore in place until new trees can grow, but in that case be extra sure to replant the missing trees immediately so they can grow back as fast as possible. Also if you don't need all of them but need some of them, then maybe pick every other tree along the shore, and maybe avoid the side of the island standing against the river current to at least focus on the side of the island that's taking less of a beating day in and day out. I am just an armchair expert, so please don't take my authoritative tone as mastery. I'm just a bit concerned and I'm pretty sure this is something you should include in your planning phase.
Looks to be what we (USA) call a round steak. From the high rear thigh of the cow. Done right it's delicious. Done wrong can become tough. Ideal for stews, soups, and good for grilling. Especially if marinated for a while first. Pan frying can be tricky due to lack of marbled fats in the meat. Start with a 'smoking hot' grill to search the outside, lower heat to actually cook the meat. You can cut into an edge to check how well cooked it is. As to the stove, looks like the wiggly pan tripped a safety device and it shut down.
@Oemssi Been butchering cows for decades. It sure looks like a round steak. Right down to the two muscles that make it up. I could be wrong, but I've cut up enough cows over the decades to have a pretty educated guess. Don't know nothing about the EU labeling. Other than it is definitely a cow. In the US you can't be too sure at the grocery store. All you know for sure here is that if you bought it from a major food store it is definitely spray painted red and has been injected with 'brine' (trust me, you don't want to know) and loaded with injected hormones. And odds are high that it came from an old dairy cow. You guys in Europe have no idea just how toxic our food supply is.

I am lucky to have several organic farms nearby (here in southern Finland) that raise highlander cattle for meat, they are awesome.
@Oemssi Everything is poison here. GMO in every grain, hormone injection now required by law in the meat. Our idea of 'organic' is renaming a pesticide every couple years so it stays off the FDA restrictions. I was lucky enough to grow up on our beef farm. Too poor to eat all that store food. Mom canned, pickled, or froze 99% of everything we ate. Looking back, it was like in the pioneer days when you went to town once a month to get some coffee, sugar, and salt. Why we do not have the same system Europe has is a mystery. Unless you think the health care system WANTS everyone sick. No profit in healthy populations.

they make these tiny level bubbles in lots of instillation construction packets. Epoxy one to your saw at a low impact location. It'll help with your felling
Steak tip...HIGH heat will give you the "crust" or "sear" youre looking for. Make sure that oil is cookin' before you drop the meat...other than that, youre good to go.
When you're working big logs, you need to have a can't hook and a peevee ( not sure about that spelling )also get a couple log hooks , not sure what the proper name is , but they come in different lengths and are at a 90° angle on each end with a sharp point on each, and can be tapped into one log and another to keep it steady . Also when you are falling a tree and you use a come along or winch and you want to get it one way or the other , wrap your rope or strap around a couple wraps to roll it away from what your trying to avoid , especially if they are hung up ! Just my thoughts ,not a sure way .
I'm no tree expert, I do have small forrest, and you have fell (fellen?) more tree then I. But I believe your face/notch cut needs to go deeper into the trunk closer to 1/2 so the weight shifts the direction you desire it to go.
When you’re push-debarking, please teach yourself to do it from both sides. It feels awkward the first few hundred times, but your back/spine will thank you alter on. I did similar movements at work in my 20s, and without a doubt it was part of the reason, that I now have a scholiosis with a slightly twisted spine. Keep on rocking. P.S. Can you make pine vodka on site?
You got quite a few cute little trees on your Island. I have no idea what you're talking about, when you say you have huge trees. Also you might want to consider designating a tree that you're not going to cut down, that is near the building site for the cabin and near the drying rack, mount a snatch block up a way's on that tree, and make a primitive crane to move the logs
I really enjoyed watching this; hopefully I'll get to do something similar in around 5 years from now. Watching the cooking of your steak reminded me of my first experience of a camping gas stove - they make way less heat than a home gas hob, so either you need a cooker that flows way more gas, or maybe use charcoal grilling for steak so you can get some proper heat into it.
Maybe for next trip, buy a grinder that's compatible with your batteries and coarse griding disc, you should find suitable discs for something like 25eur. Check puuilo if you have one nearby. There are speciality tools for debarking but those are like 300eur, so probably not worth the cost. For felling the trees - before cutting anything get a ladder and a rope, tie it as far up as you can safely get and tension the rope with the manual puller to guide the falling direction.
If you want your steaks to look like what you’ve eaten in a restaurant. Cook it over a fire or grill. Cooking steak in a pan get the pan hot. Cook the steak about 2 minutes on each side. That should give you a rare or medium rare steak. Keep on Truckin!😎

Salt your steak early (1 hour before), then pat it dry right before cooking. Dry outside of the steak means better crust. Get a temperature probe as well and use that as your main feedback method, it's a bad idea to use a stopwatch for grilling like that (you found out why ;).
Lord someone go with him and show him how to safely drop a tree and direct it the way he wants it to fall . He’s working like a dog up there by himself and I’d hate to see him get hurt !
i agree, he needs to learn how to look at a tree and determine the weighted side/lean, take into account wind speed and direction, and how to properly notch and cut a tree. the only time he should be using a wedge is if he gets his saw stuck due to misjudging the tree/wind. i used to be an arborist for 7+ years and kept getting nervous watching his videos. i would suggest bringing a friend with you and dropping all the trees you need in one shot for safety reasons. then you can take your time peeling them and moving them alone. also, I would suggest buying a real saw and a debarking attachment for that saw.

Lol but it has a large portion that is vegetation and trees / woodland . I would 100% be up for building something similar with my kids! I felt bad for you cooking your steak . although id have eaten it it looked good enough. The reason it never came out as you’d imagined was because of the oil. And not enough heat in the pan Lol. A nice way to cook a steak would be to utilise some of the bark and cuttings / off cuts . Make a little camp fire with those and just get one of those oven racks to put over the top. You should look into picking up something like the DJI Action 5 and using that as your main camera... Big perk of an action camera is that it's waterproof, but you can also connect 2 DJI microphones wirelessly too it so still get solid audio 🤌🏻plus could do some very funky angles, Timelapse's etc...
High flame, put it one side like you did but do not flip it until its seared, you want to touch it as least as possible. Then to the other side and for a steak like that, it should be medium rare already.
For your "foundation" for cabin, I know you said you are looking for a flat part . But you could dig down some of the area , to make it flat . You need a foundation anyway to place the cabin on it
ok! as far as the steak goes, that was a chuck steak which is similar but not quite the same as ribeye. I used to be a butcher, so take this for what you will because I handled raw meat and not cooked. I'd recommend cooking it on a higher heat if you can get it there with the equipment you have. Try letting the pan preheat for a bit longer and do about 3-4 minutes aside and trust that its cooking well enough without turning too often
hint to save your hands: when sharpening tools, using a knife, or handling sharp items, wear a filet glove (for cleaning fish) on the exposed hand. This helps from cutting your hand. I always use a filet glove when using a kitchen mandolin. They also make long sleeved Kevlar gloves for working in bush, etc.
Your beef did not brown (maillard reaction) properly because the pan wasn't hot enough. Part of your cabin build should be a closet or chest for cooking utensils so you don't have to bring everything on every trip. Next time, drip a few water drops on the cooking surface. If they start jumping around (leidenfrost effect) or evaporate instantly, its ready to cook.

It looked like you were cooking in butter. Not sure. If you want a great sear use a high heat oil like avocado oil and make sure the pan is almost smoking hot. 2-3 min per side, wrap it, let it rest for at least as long as the cook like and salt is your friend. If you use butter first, you are basically going to boil the steak. Use butter and herbs to finish while basting.
Cooking: too much oil, and you want a Med. to higher heat to get a nice crust and still red-pink middle. More heat normall;y means more crust more red, as long as you pull it off early to rest

In your tour of the island video, you asked for suggestions I have one main suggestion that will save you a lot of effort as long as you are felling and moving trees. Get or make a log skid. If you buy a purpose-made one, it will look like the nose cone of a rocket with a hole in it, but you can make a decent one out of the hood (bonnet lid) of ascrapped auto. The cable from your winch goes through the hole that's in the curvy part to attach to the log. The curved metal makes the log glide much more smoothly over obstacle that it would normally snag on. You trim the limbs where it falls but drag the whole logs to a processing site by your cabin. You should be able to drag 2 or 3 logs at once, if they're not huge.
You should be able to get some good pointers from the playlists of "The Outsider" and "My Self-Reliance" on TH-cam. Wranglerstar used the hood of an old car in removing deadfall and felled trees to maintain his forest.

Before the snow comes you should videotape the entire ground, it will be a lot easier to navigate and pushing the logs knowing there aren’t any stones or stumps the tree might get stuck on
If you want your steak to brown properly, lose the non stick pan and the oil. Either a good stainless steel pan, or cast iron skillet would be a huge improvement. Get the pan hot, place the pre-seasoned steak in the skillet, and don't flip it until it is ready to flip. It will stick to the pan when you put it in. When it comes loose with a nudge, flip it. When the 2nd side comes loose, put it on a plate for about 4-5 minutes before you cut it. A juicy steak should be your end result. My wife says the best steak she ever had was from a cast iron skillet over a campfire that I made her. She was probably just glad that she didn't have to cook over the open fire and smoke.
Cast iron pan. You can use it for more than frying.

Rather than felling trees distantly -> moving them -> debarking them -> then drying them, you should Fell->Debark->Dry->Move. This means you move them when they weigh the least, you just need regional debarking and drying locations around the island.

Looks like you cooked a steak! Good job. Id eat that. If youre gonna oil the pan, let it get ripping hot. Like smoke coming off it. Hot pan is the key! Doesn't mean the temp setting needs to be blasting, just let it get up to temp longer before the steak goes on.
ah so, extremely hot but for a short period. had trouble getting good steaks as well
And stop flipping it 😂 let it cook on one side, then flip. A steak like that would get a couple of minutes on each side and it's goooooood
It was a pretty thin steak so it was going to be a challenge to sear and not overcook.

I have a suggestion for you to consider.
Google goal zero skylight.
It's an area light that can be extended 12' ( 3 meters ) high. With 4 brightness setting.
In order to use the highest setting (6000 lumens) it can be plugged into any power bank with its car adapter that comes with it. It's spendy at $300 usd but it will be benefit you when you run out of daylight while you're working on your projects.
You should make a block and tackle over your drying area and attach the winch on the other end
By the way, be careful when choosing trees. The trees on the shore of the island are holding the soil in place with their roots. Once they're gone the island will begin to erode by the river constantly witling away at it. If you need to use those trees, then do what you must since their stumps and roots may still hold the shore in place until new trees can grow, but in that case be extra sure to replant the missing trees immediately so they can grow back as fast as possible. Also if you don't need all of them but need some of them, then maybe pick every other tree along the shore, and maybe avoid the side of the island standing against the river current to at least focus on the side of the island that's taking less of a beating day in and day out.
I am just an armchair expert, so please don't take my authoritative tone as mastery. I'm just a bit concerned and I'm pretty sure this is something you should include in your planning phase.
Looks to be what we (USA) call a round steak. From the high rear thigh of the cow. Done right it's delicious. Done wrong can become tough. Ideal for stews, soups, and good for grilling. Especially if marinated for a while first.
Pan frying can be tricky due to lack of marbled fats in the meat. Start with a 'smoking hot' grill to search the outside, lower heat to actually cook the meat. You can cut into an edge to check how well cooked it is.
As to the stove, looks like the wiggly pan tripped a safety device and it shut down.
I think he said it was entrecôte, which is basically a ribeye steak in the US. Lack of crispiness means not enough heat.
@Oemssi Been butchering cows for decades. It sure looks like a round steak. Right down to the two muscles that make it up. I could be wrong, but I've cut up enough cows over the decades to have a pretty educated guess. Don't know nothing about the EU labeling. Other than it is definitely a cow. In the US you can't be too sure at the grocery store. All you know for sure here is that if you bought it from a major food store it is definitely spray painted red and has been injected with 'brine' (trust me, you don't want to know) and loaded with injected hormones. And odds are high that it came from an old dairy cow. You guys in Europe have no idea just how toxic our food supply is.

I am lucky to have several organic farms nearby (here in southern Finland) that raise highlander cattle for meat, they are awesome.
@Oemssi Everything is poison here. GMO in every grain, hormone injection now required by law in the meat. Our idea of 'organic' is renaming a pesticide every couple years so it stays off the FDA restrictions. I was lucky enough to grow up on our beef farm. Too poor to eat all that store food. Mom canned, pickled, or froze 99% of everything we ate. Looking back, it was like in the pioneer days when you went to town once a month to get some coffee, sugar, and salt. Why we do not have the same system Europe has is a mystery. Unless you think the health care system WANTS everyone sick. No profit in healthy populations.

I think you could catalog how many logs, what size and how old they are and make a board with all the info and possibly a first sketch of the cabin so you could hang it on the wall once done. they make these tiny level bubbles in lots of instillation construction packets. Epoxy one to your saw at a low impact location. It'll help with your felling
Cut your stumps as low as you can get them. After you clean all the unnecessary wood you can burn out the stumps that would be in your "yard"
Steak tip...HIGH heat will give you the "crust" or "sear" youre looking for. Make sure that oil is cookin' before you drop the meat...other than that, youre good to go.
Good job on the next tree. Keeping the stump as short as possible is tricky when you are tall.
Put your wedges in sideways, like almost parallel to the bar. Works great for smaller diameter trees and you won't hit the wedges while sawing.
When you're working big logs, you need to have a can't hook and a peevee ( not sure about that spelling )also get a couple log hooks , not sure what the proper name is , but they come in different lengths and are at a 90° angle on each end with a sharp point on each, and can be tapped into one log and another to keep it steady . Also when you are falling a tree and you use a come along or winch and you want to get it one way or the other , wrap your rope or strap around a couple wraps to roll it away from what your trying to avoid , especially if they are hung up ! Just my thoughts ,not a sure way .
I'm no tree expert, I do have small forrest, and you have fell (fellen?) more tree then I. But I believe your face/notch cut needs to go deeper into the trunk closer to 1/2 so the weight shifts the direction you desire it to go.
yes, even cut past half on wedge if you want to fell against the center of mass.
When you’re push-debarking, please teach yourself to do it from both sides.
It feels awkward the first few hundred times, but your back/spine will thank you alter on.
I did similar movements at work in my 20s, and without a doubt it was part of the reason, that I now have a scholiosis with a slightly twisted spine.

You got quite a few cute little trees on your Island. I have no idea what you're talking about, when you say you have huge trees.
Also you might want to consider designating a tree that you're not going to cut down, that is near the building site for the cabin and near the drying rack, mount a snatch block up a way's on that tree, and make a primitive crane to move the logs
For the steak you have to wait for the pan and oil to be hot first. Then you put the steak on
I really enjoyed watching this; hopefully I'll get to do something similar in around 5 years from now. Watching the cooking of your steak reminded me of my first experience of a camping gas stove - they make way less heat than a home gas hob, so either you need a cooker that flows way more gas, or maybe use charcoal grilling for steak so you can get some proper heat into it.
The new debarking tool seems like a game changer.

Bin the gas stove for cooking food. Build a proper fire pit, dude! Keeps you warm and cooks your dinner.
For the battery get the foam board insulation and that will keep it warmer then what you just put in the barrel
Maybe for next trip, buy a grinder that's compatible with your batteries and coarse griding disc, you should find suitable discs for something like 25eur. Check puuilo if you have one nearby. There are speciality tools for debarking but those are like 300eur, so probably not worth the cost.
For felling the trees - before cutting anything get a ladder and a rope, tie it as far up as you can safely get and tension the rope with the manual puller to guide the falling direction.
You need a longer handle on your peavy to help roll logs, a longer lever arm will help
Have a machine shop weld a piece of steel to the handle
If you want your steaks to look like what you’ve eaten in a restaurant. Cook it over a fire or grill. Cooking steak in a pan get the pan hot. Cook the steak about 2 minutes on each side. That should give you a rare or medium rare steak.

Salt your steak early (1 hour before), then pat it dry right before cooking. Dry outside of the steak means better crust.
Get a temperature probe as well and use that as your main feedback method, it's a bad idea to use a stopwatch for grilling like that (you found out why ;).
You should look up tree felling with the safe corner,
Lord someone go with him and show him how to safely drop a tree and direct it the way he wants it to fall . He’s working like a dog up there by himself and I’d hate to see him get hurt !
i agree, he needs to learn how to look at a tree and determine the weighted side/lean, take into account wind speed and direction, and how to properly notch and cut a tree. the only time he should be using a wedge is if he gets his saw stuck due to misjudging the tree/wind. i used to be an arborist for 7+ years and kept getting nervous watching his videos. i would suggest bringing a friend with you and dropping all the trees you need in one shot for safety reasons. then you can take your time peeling them and moving them alone. also, I would suggest buying a real saw and a debarking attachment for that saw.

Please make sure the contacts of the battery in the bin do not touch any of the metal handles of the straps or the straps for that matter, seeing some straps contain metal strips.
You want that pan ripping hot for a nice crust on your steak - I am sure it was still good though!
There are grinder machines that have log peeling disc's would save u a lot of time and energy if you used that, just needs power

I felt bad for you cooking your steak . although id have eaten it it looked good enough. The reason it never came out as you’d imagined was because of the oil. And not enough heat in the pan Lol. A nice way to cook a steak would be to utilise some of the bark and cuttings / off cuts . Make a little camp fire with those and just get one of those oven racks to put over the top. You should look into picking up something like the DJI Action 5 and using that as your main camera... Big perk of an action camera is that it's waterproof, but you can also connect 2 DJI microphones wirelessly too it so still get solid audio 🤌🏻plus could do some very funky angles, Timelapse's etc...

High flame, put it one side like you did but do not flip it until its seared, you want to touch it as least as possible. Then to the other side and for a steak like that, it should be medium rare already.

For your "foundation" for cabin, I know you said you are looking for a flat part . But you could dig down some of the area , to make it flat . You need a foundation anyway to place the cabin on it
ok! as far as the steak goes, that was a chuck steak which is similar but not quite the same as ribeye. I used to be a butcher, so take this for what you will because I handled raw meat and not cooked. I'd recommend cooking it on a higher heat if you can get it there with the equipment you have. Try letting the pan preheat for a bit longer and do about 3-4 minutes aside and trust that its cooking well enough without turning too often
I know the first cut of the chuck is still the best bang for your buck
The French cut Entrecôte (“entre = between” and “côte = rib”) is taken from the intermediate rib. This is not a chuck steak.

hint to save your hands: when sharpening tools, using a knife, or handling sharp items, wear a filet glove (for cleaning fish) on the exposed hand. This helps from cutting your hand. I always use a filet glove when using a kitchen mandolin.
They also make long sleeved Kevlar gloves for working in bush, etc.
I stopped using those stupid slide things on my mandolin years ago and just use a filet glove

Your beef did not brown (maillard reaction) properly because the pan wasn't hot enough. Part of your cabin build should be a closet or chest for cooking utensils so you don't have to bring everything on every trip. Next time, drip a few water drops on the cooking surface. If they start jumping around (leidenfrost effect) or evaporate instantly, its ready to cook.

You need to heat your pans until they’re very hot before you cook your steak. And then only flip once!
Try the dry rice trick. Will it dry it out? No idea?
It looked like you were cooking in butter. Not sure. If you want a great sear use a high heat oil like avocado oil and make sure the pan is almost smoking hot. 2-3 min per side, wrap it, let it rest for at least as long as the cook like and salt is your friend. If you use butter first, you are basically going to boil the steak. Use butter and herbs to finish while basting.
Cooking: too much oil, and you want a Med. to higher heat to get a nice crust and still red-pink middle. More heat normall;y means more crust more red, as long as you pull it off early to rest
