The Gambrel roof is a half circle, 5 points of the roof touch the circle, which can be layed out on the deck before the walls are started. If you build anything over ten feet, it is best to treat each slope as a separate roof. Do your 30 pitch , you can plywood and shingle the roof flat, get help lifting the wall / roof. do both sides as needed. the top of your rafter you will have your cill plate. You can calculate your 5 pitch off of that span, or what ever pitch you decide to use.
