- Afghani Pulao I Kabuli Pulao Recipe I One- Pot Easy Recipe
Cooking Process
1. Cut the carrot in a julienne shape. In a pan add 3/4 cup sesame oil. (Low heat)
Add raisin and then carrot, cook 1 min until lightly crisp. Set aside separately
2. Wash and Soak Basmati rice for 40 min
3. In the same oil add mutton pieces fry each side 2 min (mid-high heat)
4. Then add 1 cup onion,1tbsp Afghani pulao masala, salt 1/2tbsp or salt to taste,
1tbsp ginger paste,sauté 2 min. Add hot water and cook and cover until meat is tender
(low-heat 40-45 mins)
5. Separate mutton PCs from the broth. Add soaked rice . Cook Rice with 2 cups extra
hot water, whole spices(1/2 tsp black pepper, 6 pcs green cardamom,
2 pcs black cardamom, 1stick cinnamon ), Salt1tsp+Sugar 1/2 tsp
6. Cook Rice until all water reduce and 80% done
7. Add mutton, Garnish raisin, and julienne carrot with 1 tbsp Afghani polo Masala.
Cover the lid, Cook in (low heat), and simmer for 15-20 min. And then switch it off.
8. Mix and ready for serve
