    I made a similar apple filling last year for my mom's birthday! Where I went wrong was after making the apple filling, I put it in the food processor and basically made apple sauce (I was experimenting quite a bit). While the macaron tasted great, I noticed some of them were soaked through the bottom because of the apple sauce filling. Now I know to use corn starch to get a thicker consistency! Thank you 😊

    They are so beautiful. Do you recommend using color powder instead of gel? If so, at what point should I add the color powder?

      I have been trying the master elite food coloring but I am not really a fan so far. But yes you can, some people add it to the whites after they're done beating, I add along with the dry ingredients.

    Isn't the caramel sweet already? Can I omit the powdered sugar? Because the shell is sweet, the caramel is sweet the apple filling is sweet too....

      if you omit the powdered sugar the frosting won't firm up, the powdered sugar makes the buttercream stiff, without it, it will be a running mess.

    Is there a certain temp the caramel should reach? Of all the things I can do in the kitchen caramel is my enemy 😩

      Take your sugar till 118*C and then add the cream and butter. You should end up with a nice caramel

      Sorry I have never temped my sugar. I will next time I make it. But as soon as the last bit of sugar melts, immediately add the heavy cream. Keep the heat on medium, this way it won't burn the sugar, make sure to use a pan with a heavy bottom, so the sugar doesn't burn. Then, add the heavy cream and the butter, and immediately as the butter melts, remove the sauce from the heat. It will be super liquidy and that's ok. Just don't cook any further after the butter has melted.

      Thank you so much! I had been trying another recipe from a class I paid for and it's just not working. With that recipe you cook the sugar & water then add cream, cook again & add butter. I have 2 thermometers and bought a new pan thinking that was an issue. After 6 attempts I have to try something else before I lose my mind haha Theres not much I can't do im the kitchen so its literally driving me insane. While my macs are resting today I'm going to try this one 🤞

      @@shainavanhoose3953 good luck! hope it works for you! just remember to keep stirring so the sugar melts evenly, and don't overcook at any point. I really love this recipe it's easier than the ones using water in my opinion, so I have been using this one for years and it's my absolute favorite!

      It worked perfectly the first time. I did have to use a rather large sauce pan because smaller ones are pioneer woman so they are rather thin, tho I love them for cooking. The one I used was 3.5q so could I double or even triple the recipe? Lol I need lots of sauce 😅
