🔺INGREDIENTS 🔺
basmati rice -700 grms
kurnul sona rice - 300 grms
ghee - 3 tbl spn
cooking oil - 3 tbl spn
cloves - 8-10
cinnamon - 2-3 inch piece
cardamom - 5-6
mace - small piece
star anise - 1
kapok buds - 2 small
black cardamom - 1
onion slices - 3 medium sized
ginger garlic paste - 5 t spn
green chillis - 9-10
coriander leaves - hand full
mint leaves - hand full
tomatoes - 3 medium roughly chopped
salt - 5 t spn (or) as required
chilli powder - ½ t spn
biryani masala powder - ½ t spn
water - 1:1&½ ratio
(Ex: for 1 glass rice use 1& ½ glass water)
mutton gravy - 2 ladles
to enhance the taste (if possible)
lemon juice - 1
pinch of food colour (optional)
milk - 20 to 30 ml

1Kg Pulao Recipe
With English Subtitles
(Follow the video along with these subtitles)
700 grms basmati rice & 300 grms of normal rice (kurnool sona) total 1 kg rice.
Firstly measure the rice. rinse 3 times and add enough water.keep it a side.
Heat a thick bottom utensil and add 2 - 3 tbl spn ghee and 3 tbl spn of refined oil.
Add Cloves - 8, Cinnamon - 2 to 3 inch, Green cardamom - 5 to 6, Black cardamom - 1, Mace - small piece, Star anise - 1 small, Kapok buds - 2 small.
When the oil heats, firstly add these biryani spices.
Medium sized chopped onions - 3
Stir and cook till the onions lite golden.
Ginger garlic paste - 5 t spn (it is enough for 1 kg pulao)
Measure ginger garlic paste moderately. neither too much nor too little.
Stir & cook till the raw smell disappears of ginger garlic paste.
Green chillis - 9 - 10.
Coriander leaves
(hand full, measure on finger tips)
As shown in the video
Mint leaves
(hand full, measure on finger tips)
(Do not add too much)
Mix well.
At this stage keep the flame on medium.
Stir & cook for 2 mins.
Medium sized chopped tomates - 4.
Mix well.
(At this stage, we have to add salt, red chilli powder & biryani masala powder and then Cover & Cook for 5 - 6 mins on low flame)
Salt to taste or (4 - 5 t spn)
Red chilli powder - ½ t spn
Biryani masala powder - ½ t spn.
(Homemade Biryani masala powder is the best. video link in description)
Mix well and keep the flame low.
Cover & cook on low flame for 5 - 6 mins.
Till then measure the water.
Water should be measured with the same container which is used for measuring rice.
Ex: For 1 cup rice use 1& ½ cup water. (i:e 1:1&½ ratio)
Measure the water as shown in the video.
Heat the measured water on another stove.
(Coming back to pulao)
After 5 mins, (do this to enhance the taste of pulao)
Creatively try like this.
Add 2 ladles of mutton gravy. This way pulao tastes more delicious.
Mix well & keep the flame low only.
Cover & cook for 2-3 mins.
After 2-3 mins, give it a good mix and add measured warm water.
After adding water, keep the flame on high.
Sqeeze a lemon juice.
(It is enough for 1 kg of rice)
When the water comes to a boil add soaked rice. (add without water)
Mix well.
Cook on high flame, till the rice (almost cooked) getting tight.
Keep stirring in between.
When the rice is (cooked) tight, turn the flame to low and add 20 ml of milk.
(food colour mixed milk, food colour is completely optinal)
After adding milk, cover & Place something heavy to prevent the steam from escaping
Cook for 2 - 3 mins on low flame.
After 2 mins, turn off the flame.
Do not open the lid immediately.
Let it set for 5 to 10 mins.
After 10 mins you can serve with mutton gravy or chicken gravy.
Dalcha (or) khatta also goes well with this pulao.
