Some people have complained about the pasture pens at Polyface for the broilers. What those people don't know it that those birds cannot fly regardless. The public has been trained to expect the double-breasted commercial hybrid chicken (but not GMOed, as far as we know!) - and those birds cannot fly. They can't really even get up on roosts, so they don't care if the portable coops / pasture pens / drag pens are not very high. The laying hens at Polyface are in much larger portable henhouses, with roosts and nests, and wide open paddock areas enclosed with electified netting and moved daily, as well.
'We are what we eat.' That said, there are a lot of reasons to preserve heritage breeds. Once genes are lost, they cannot be recovered. (And a lot of heritage chicken breeds are not at all flighty.)
