Phoenix if you remember villagers don't render armor. They wear it and get the effects of it, but it's just invisible. However, I assume it's not consuming the item, because villagers technically aren't supposed to be able to wear it for some reason or another.

I suspect this uses a similar mechanism to the shadow item technology, aka poppy technology showcased by Docm77. If the code to make a villager hold an item just has a pointer to the first trade item then theoretically the bit of code that destroys totems could just act on that pointer and accidentally delete the item in the list of trades rather than just the entity's inventory. I haven't looked at the code myself so take this with a grain of salt, but it seems plausible.

The fact that the totem disappears afterwards is also really cool.
So after watchin this video I wondered about a certain mod by the name of 'Reliquary Reincarnations' which has an item called the 'Rod of Lyssa' which allows one to take items from other players/mobs. For example taking a bow from a skeleton or a gold sword from a zombie piglin, or even golden armor that a normal piglin is wearing. So this got me thinking "what about the items that are being held by a villager?" So I created a modpack with just this mod for 1.18.2, spawned in a villager and made them a blacksmith, held the rod in my offhand while holding the emerald in my main hand to display the item for sale, crouched while casting my rod and sure enough I was able to get the item at no cost. The real kicker here is the rod can sometimes damage the item by just a bit and that even affected the villagers shop inventory screen showing me they had a slightly broken pickaxe to sell me.
