I love pancakes sweet and have never tried savory pancakes. I actually make mine thin and big so i can roll it up. Like crepe suzettes. The filling i like is cottage cheese mix (with lemon zest, sugar, sour cream (fresh cream) and vanilla.) I can eat it all day long. But i can imagine savory flavors like bacon bits with chives, smoked ham chopped finely with fresh Mozzarella cheese or any mild cheese- Tasty Cheese ie.
