Maybe stop sprinting around and try to jockey by using L2/LT or L1/LB more. They might also have low stamina, youth academy players usually have between 45 and 65 stamina which is bad
I've only found the "constant pressure" tactic to cause massive half time fatigue. I rarely use the sprint button, but the AI must have them all sprinting to press after losing the ball. Especially full backs. If moved to "press on heavy touch" that seems to be the best press, with least stamina drain. Doing a Monaco career though, and PSG seem to be able to apply a ridiculous press for the full 90mins, with their players not being as drained as mine. I have guys like Kesse with 94 stamina by the way, and no way does Neymar have that level, or Diego Costa who they randomly signed to play RW.
