Maybe try soaking in the water for around 10 mins. see if it works.
Also can substitute with cilantro stems or coriander powder.
Perhaps you should’ve added the 3T of water to the corn starch.

Why not directly using pork belly as layers of fat for the taste will be already there between layers of lean meat when you cut it vertically ?
Can if ones want.
Pork belly is my most favorite cut but for making Moo-Ping I would pick other leaner parts over it 😃
