- WHAT'S FOR DINNER THIS WEEK?!
This week I was trying to eat down my freezer in hopes of filling it back up with more homemade versions of my favorites. So at least one element of my dinners this week should have come from the freezer, and it was! The freezer isn't completely empty, but I made a dent!
Monday:
Mom's Tomato Chicken (this recipe is for 2-3 boneless skinless chicken thighs)
-2-3 boneless skinless chicken thighs
1 14.5oz can of diced tomatoes juice and all
-1 tbs dried onion flakes
-1 tbs dried granulated garlic
-1 tab chicken boullion powder
(Or you can replace the last three things with a packet of dried onion soup mix)
**Bake covered in a 375F oven for 2 1/2 hours
Chicken Salad:
-2 cups chicken: cooked and chopped
-1-2 celery stalks: finely chopped
-1 granny smith apple: diced
-1/2 cup dried cranberries: chopped
-1/2-3/4 cup mayonnaise
-Salt and pepper to taste
Tuesday:
Tortellini Dish (there are no measurements for this, just add however much you like!
-Tortellini, garlic, asparagus, artichokes, lemon zest, parmesan cheese, chicken bone broth, cooked chicken thighs
Wednesday:
Vegetable Lo Mein (again, no real recipe, just add your favorite veggies and/or meats)
-Lo mein noodles, onion, carrots, cabbage, garlic, ginger.
*Sauce ingredients I used: soy sauce, hoisin, rice vinegar, sesame oil
Thursday:
Leftover Lo Mein Rice Paper Dumplings
-2 rice paper wrappers per dumpling
-1-2 tbs filling (lo mein in my case)
*frying pan with a little vegetable oil on medium heat, fry until crisp on all sides
*Sauce I made was soy sauce with a little rice vinegar
Friday:
Frozen French Onion Soup!

I like to freeze leftover portions of soups, chili, chicken and dumplings, etc. Anything I make a big pot of and then I have these frozen single serve portions when I’m too tired to cook and that really stretches your money too. And you get a hearty satisfying meal with little effort. 😊
Soup!! That’s such a good one!! Especially when you don’t want to heat up the kitchen in the summer but you just need some soup!
This encouraged me to use up what’s in my freezer! Sometimes when I put things in my freezer, it becomes a freezer graveyard that I forget about🙈
No but actually! Hahaha I found those noodles like deeeeep in the abyss of the freezer! It’s definitely helping me be more organized and more mindful!

Usually, if I have precooked food in the freezer, it's because I didn't want it then, so I think, why would I want it now? And I end up tossing it. But I do keep a lot of pre-prepped items: sliced and chopped peppers, meatballs and sliced roundsteak for stir-fries or soup, pestos and mashed avocado and diced tomatoes, so it's easy to come up with something quick. Love what you did with the garlic.
I’m finding prepped ingredients are so the way to go, that way I can make whatever I want instead of being “stuck” with what I have!! Great tip!!
