How to Make Chive Wanja Jeon Crispy on the Outside and Soft on the Inside

    [ Chive wanja jeon ]
    [ Ingredients ]
    *Chive wanja jeon
    2 cups (300g) minced pork
    1/2 block (150g) tofu
    1 stalk (100g) green onion
    about 12 stalks (60g) chives
    about 1/3 cup (40g) Korean pancake mix
    3 tbsp (30g) dark soy sauce
    2 (20g) Cheongyang pepper
    about 1/2 tbsp (15g) minced garlic
    2 eggs
    a moderate amount of cooking oil
    a pinch of flavored salt
    a pinch of black pepper
    *Soy-based dipping sauce
    2 tbsp (16g) vinegar
    1 tbsp (10g) dark soy sauce
    some light brown sugar
    some onion
    some Cheongyang pepper
    [ Directions ]
    *Chive wanja jeon
    1. In a deep cup or bowl, whisk the eggs and set aside.
    2. Remove the stem of the Cheongyang pepper. Quarter lengthwise and slice into pieces 0.3cm thick.
    3. Slice the green onion lengthwise and then slice into pieces 0.3cm thick.
    4. Finely slice the chives into pieces 0.5cm thick.
    5. Shake off the excess moisture from the tofu and crush it with the side of a knife.
    6. To make the wanja jeon batter, in a deep bowl, combine the minced pork, egg, Cheongyang pepper, green onion, chives, minced garlic, dark soy sauce, Korean pancake mix, flavored salt, black pepper, and tofu.
    *You can add some sesame oil to your liking.
    *You can use fine salt instead of flavored salt, or add some artificial flavoring to your liking.
    *If you are using beef dashida, reduce the amount of dark soy sauce.
    *If the dish is for kids, skip the Cheongyang pepper.
    7. Coat a frying pan with a generous amount of cooking oil and preheat over medium heat.
    8. Using a ladle, scoop up the wanja jeon batter and spread it on the frying pan to 1cm thick. Lower the heat and cook the jeon as if deep-frying.
    *Tilt the pan in a circular motion so that the oil can seep into the center of the jeon.
    *You can also scoop the batter with a spoon and make several small jeons.
    9. Once one side of the jeon turns golden brown and crispy, pour the oil into another frying pan and flip the wanja jeon.
    10. Pour the oil back into the frying pan with the wanja jeon and continue cooking the other side.
    11. Once the wanja jeon is cooked thoroughly, slightly hold it up with a spatula and let the excess oil seep out. Plate and serve.
    12. Dip the jeon in soy-based dipping sauce or ketchup.
    *Soy-based dipping sauce
    1. Dice the onion into pieces 0.5cm on all sides.
    2. Remove the stem of the Cheongyang pepper. Slice lengthwise and then slice into pieces 0.3cm thick.
    3. Combine one part dark soy sauce with two parts vinegar. Add sugar and mix thoroughly.
    *You can adjust the amount of sugar to your liking.
    4. Add the onion and Cheongyang pepper into the sauce.
    *You can use red chili pepper powder instead of onion and Cheongyang pepper.

    [ 재료 ]
    *부추완자전
    다진 돼지고기 2컵(300g)
    두부 1/2모(150g)
    대파 1대(100g)
    부추 약 12줄(60g)
    부침가루 약 1/3컵(40g)
    진간장 3큰술(30g)
    청양고추 2개(20g)
    간 마늘 약 2/3큰술(15g)
    달걀 2개
    식용유 적당량
    맛소금 약간
    후춧가루 약간
    *찍어 먹는 양념간장
    식초 2큰술(16g)
    진간장 1큰술(10g)
    황설탕 약간
    양파 약간
    청양고추 약간
    [ 만드는 법 ]
    *부추완자전
    1. 달걀은 깊은 컵이나 볼에 잘 풀어 준비한다.
    2. 청양고추는 꼭지를 제거한 후 길게 1/4로 가른 후 두께 0.3cm로 송송 썬다.
    3. 대파는 길게 반 갈라 두께 0.3cm로 송송 썬다.
    4. 부추는 두께 0.5cm로 송송 썬다.
    5. 두부는 물기를 털어낸 후 칼날로 눌러 으깨어 준비한다.
    6. 깊은 볼에 다진 돼지고기, 달걀, 청양고추, 대파, 부추, 간 마늘, 진간장, 부침가루, 맛소금, 후춧가루, 두부를 넣고 재료가 뭉치지 않도록 골고루 섞어 완자전 반죽을 만든다.
    *기호에 따라 참기름을 넣고 함께 섞어도 좋다.
    *맛소금이 없다면 꽃소금을 사용하고 기호에 맞게 미원을 약간 추가하면 더욱 맛이 좋다.
    *소고기다시다를 사용할 경우 진간장 양을 줄여 사용한다.
    *아이들용은 청양고추를 빼고 만든다.
    7. 프라이팬에 식용유를 넉넉하게 두른 후 중불에 예열한다.
    8. 국자로 완자전 반죽을 떠 예열된 프라이팬에 올려 두께 1cm 정도로 펼친 후 약불로 줄여 튀기듯이 익힌다.
    *프라이팬을 둥글게 돌려가며 완자전 중심부까지 기름이 골고루 들어갈 수 있도록 한다.
    *완자전을 숟가락으로 떠 작게 여러 개 부쳐도 좋다.
    9. 한쪽 면이 바삭하고 노릇하게 익으면 프라이팬에 있는 기름을 다른 프라이팬에 따라낸 후 완자전을 뒤집는다.
    10. 따라낸 기름을 다시 완자전이 있는 프라이팬에 부어 준 후 반대쪽 면도 튀기듯이 익힌다.
    11. 완자전이 골고루 익으면 뒤집개로 들어 올린 후 프라이팬 가장자리에 기대어 기름을 살짝 빼고 접시에 옮겨 담아 완성한다.
    12. 양념간장 또는 케첩에 찍어 먹는다.
    *찍어 먹는 양념간장
    1. 양파는 사방 0.5cm로 사각썰기 하여 준비한다.
    2. 청양고추는 꼭지를 제거한 후 길게 반 갈라 두께 0.3cm로 송송 썬다.
    3. 진간장과 식초를 1:2 비율로 섞은 후 설탕을 넣고 섞는다.
    *설탕의 양은 기호에 맞게 조절한다.
    4. 섞어둔 양념장에 양파, 청양고추를 넣고 섞어 완성한다.
    *양파와 청양고추가 없다면 고춧가루를 넣고 만들어도 된다.
