should you be mindful that if your donor battery is still connected under the hood to release the trunk lock the terminals would be live on the battery even if its disconnected ?

These are AGM batteries -- not wet cell -- and are sealed. The little tube is to vent any gases that may be explosive from building up in the trunk. Overcharging or a defective battery may lead to production of hydrogen gases that should be vented from a close space.
