    Egg and vegetable rice
    Ingredients
    Potato small 2, mixed vegetables ( carrot,peas,sweet corn) 1 cup, mushrooms 2, large onion 1/2 , garlic and ginger paste 1tblspn, salt 1/2 tspn, oil 3 tblspn
    Rice 3 cup, eggs 4, black pepper ,spring onion
    Directions
    Cut potatoes into small pieces.
    Cut mushrooms
    Rice wash and soak for 15 min
    Put oil into the pot. Then add onion.stir for 1 min.then add potato, vegetables, spring onion, salt and pepper. Stir and cover for few minutes.
    Open the lid and stir again then add hot water.
    Pour the rice into the pot..add half cup more hot water.
    Simmer for 1 minute. Crack open the eggs on top of the rice.
    Put the lid back on and then cook on slow heat for 10 to 15 minutes.
    serve with your favourite curry.
