I tried UniConverter. I found the interface to be unintuitive. The trial version made the metadata visible on the video and I could not figure out how to turn this off. I don't know if this visible metadata is easily turned off in a setting -- I tried to find it, but could not locate it. As a result, I have chosen to use a different converter.

Matroska (MKV) is actually the recommended container for analogue-to-digital video content. It is far more versatile in terms of retaining original tracks & formatting than any other container type. It can contain both lossy consumer video types like H.264 and H.265 but also professional mezzanine and raw video formats like ProRes, DNxHD and FFV1. The main reason MKV hasn't made other containers redundant is ... Apple. Apple hates all open source media formats, because they disrupt their business model.
