Release tack line and sprit together and collect the entire foot. Only then do you blow the halyard. Slowing gybing into a windward take down makes it clean and simple!
Have you considered standing during the jibe with the tiller between your legs, facing forward behind the traveler the entire time. Gives a better control of the helm then the bungee cords and keeps you away from the main steet. That's what I do on my J100, but it is a bigger cockpit and a more stable platform, so it might not work on the J80. Something to consider.
Nice vid! Been solosailing with my J/80 for a few sessions. For a simple spinnaker drop I like to use kiwi-drop, the spinnaker then gets into the boat instead of out in the water if the boat starts to head up.
Would it make it easier to install a couple of winches aft for easier solo tacking and driving from behind the traveler? Not racing so no problem doing any mods...

well done mate but yoiu shoud try to gyb with the tiller in betwen your knees like in 470
The boat is also reacting to your body weight being on the leeward side and keeps luffing, you can steer using boat balance.
Get rid of the bungees stand behind the main sheet with the tiller between your knees. And man! keep those lines clear!
