      Hey, so could you technically use a high grit sand paper for this? Almost like wet sanding to polish it, I ask because in a photographer. So, I think it would be an amazing to get a pic of the ice, with whiskey flowing down it inside that glass. But in a super circular ice ball.

    Fun fact: Back when they would harvest ice off of lakes, they would store them in an isolated silo that would stay cool all year round. Additionally, at that time, they believed that ice harvested in this way was (from my understanding) naturally purified. This meant that they didn't really do much to try to clean the ice or make sure there wasn't junk in the ice blocks.
    Naturally, this wasn't actually true, especially since the lakes they were pulling from were the same ones that shipping boats would go through.

    I left a Death Star ice mould outside once in the winter when I knew the temperature was going to be below freezing, and it made the most perfectly clear ice I've ever seen. It couldn't have been as a result of directional freezing though, because there was no insulation around it. I've wondered for ages what caused it.

    • @ascendedvegeta
      @ascendedvegeta 4 ปีที่แล้ว

      If you left it in the snow then you did have insulation. Snow is actually pretty good insulation. That's why you can actually get pretty toasty in an igloo

  • @HomemadeChemistry
    @HomemadeChemistry 4 ปีที่แล้ว +30

    It's neither impurities nor air bubbles which make the ice cloudy, at least not for the main part. It's the kind of crystallization going on. At the beginning of the freezing it happens slowly and all crystals can arrange in an even pattern going the same direction. The last bit that freezes which is normally in the middle goes very quick and at different locations at the same time, so you get crystal patterns which interlap and crash into each other. This reflects the light, thus not transparent.

    • @KudzuNinja7
      @KudzuNinja7 4 ปีที่แล้ว +9

      I concur. It is the intersection of different orientations of crystallization which results in cloudiness.

    • @gso619
      @gso619 4 ปีที่แล้ว +23

      Not really, no. Drinks are generally supposed to list the amount of liquid and the amount of liquid doesn't include the ice. Cause, well, they'd get sued otherwise. Whether you get 200ml of booze in a glass with no ice or 200ml of booze in a glass that's filled with ice and twice as large, you're still getting the same amount of alcohol and the same amount of drink. So, it's not scamming you out of a drink, it just makes the drink seem bigger than it actually is.
      The way you scam people is by just substituting the alcohol with a cheaper one, cause no shitfaced college girl is gonna notice her 5th appletini for the night has vodka in it instead of gin. Or if you wanna be stingier, underfilling the shaker and then overshaking it, which causes too much of the ice to melt into the drink, essentially watering it down, so you still get 200ml, but 50 of those are water. You do this cause you can't just add in water directly - you're at a bar, everyone can see what you're doing.

    For a much more reasonably sized version of this, try an insulated coffee mug, same effect just smaller, which fits in your freezer more easily, has less volume so likely doesn't take as long, and results in ice that fits quite well in a rocks glass and doesn't need to be handcut afterwards.

    I wonder if you could also put it in a vacuum chamber and pull away the dissolved gasses with a weak vacuum and heat, then pull a stronger vacuum below the vapor pressure of water to freeze it (as it boils, it takes away heat, so it will freeze).

    Couple years ago I used to work at a place that supplied bars/pubs/clubs with anything bartender-y. The place also sold ice in both the big 5 Kg & 10 Kg bags, as well as cut clear ice. That was my part-time job. We would fill the cooler boxes with tap water to about 3/4 full & put them into big chest freezers for a few days (~3-4). When it came to cutting the ice, you would need to take them out & let them thaw for about 1 hour before you could even get them out of the cooler boxes. Then I would be the one to knock out the water 'bubble' of all the unfrozen water which was filled with impurities at the bottom. Then I would need to take the 200x240x70-100-ish mm block of ice & cut it into the 50x50x50 cubes that we sold the most of. Think 400 of them sold in bags of 20 for about £5.
    Thing is, we didn't have anywhere that could supply us with the right band-saw blade for ice, so we had to make do with butcher's band-saw blades (the kind for cutting up frozen meat & fish), which was pretty scary for me as I nearly lost a few fingers on many occasions, even with my very grippy gloves. Because of the improper use of the blade, we got through quite a few some weeks. They were supposed to last 2 weeks, sometimes they failed after a few days, the shortest life was 3 hours.
    The other sizes were 50x50x60(in bags of 20 for one specific place), 40x40x150 mm(in bags of 10) for tall glasses, & 80x80x80 mm(in bags of 10) which were then put into a heated up, metal ice ball mould. Although this would result in some very pretty clear/near clear ice balls, they were a pain in the arse to make because you had to nearly constantly have the kettle boiling to heat water, which went into a container to constantly re-heat the ice moulds every two or three times. Plus we only had two moulds of the right size, which was for a 75 mm diameter ball, thus the 80x80x80 dimensions. All of this was done in the 4mx2m kitchenette that had a fridge, microwave, sink, & a metal worktop with the band-saw on it.

    Mo hypothesis for boiling the water would be degassing. Since gasses dissolve into cold water much more readily compared to hot water, it'd make sense that bringing the water to a boil would remove those dissolved gases, improving clarity of frozen before more gases dissolve.
    This of course doesn't rid the water of solid dissolved or suspended impurities, so it won't be perfect, but should help.

    If you have impurities in the water the last thing you want to do is boil it, that will only concentrate the impurities... boiling it and recondensing it (aka distilling) would work, though. Boiling would help with the dissolved gasses, but not solid or liquid impurities.
