Mutton tastes best when it is made using a Bakra and the animal is slaughtered in Jhatka style followed by letting the meat dry to allow for excess water to dry out. Jhatka method of slaughtering ensures the death is instant and there by the brain of the animal does not gets enough time to send signals to entire body to stiffen up as a reflexive response this ensures the meat does not stiffens or hardens and drying it for close to 3 hrs minimum before cooking ensures the moisture content is optimum to absorb the flavors of spices and DESI GHEE ! Mutton should never be cooked in any oil except Desi Ghee and cold pressed Mustard oil. These two are best for meat cooking.. for chicken mustard oil may not be that best considering chicken is blunt tasting flesh and mustard oil being intense in flavor. Nice Vlog Ashish ji !
