    A Poutine restaurant just opened in my town. It is owned by a couple of Canadian Ex-Pats. It has only been open for 2-weeks and is already the talk of the town. I've tried several of their recipes and they are great.

      2. With the name “DadCooks” it makes me think you know a bit about the kitchen...plus seen you on a bunch of live chats so hello to you again. Which leads me to:
      3. Absolutely nothing wrong with this poutine and I would love to have it in front of me right now, but say you kick it up a bit? I have a couple ideas.

    My mom has a friend who moved from Canada and he introduced us to this at a very nice restraint in Oakland California

    We call it loaded fries here in Australia, and sometimes add cooked backn to the layers (depending on who/where its made)
    Very yummy

    I dont remember having the cheese curds in the fries with gravy when I was up there 25+ years ago. The Canadian Poutine was so good. Absolutely Love it.

    I always loved school field trips to Canada for the opportunity to get poutine while stopped for food. Your setting in Calgary seems so idyllic from the vantage point of chaotic Michigan/US. My friend and I have a joke: The real (North) American Dream can be found in Canada! I already deep-fry at home. It's time for me to get some chives, cheese curds, and gravy to make my own poutine. Thanks for the recipe and inspiration!

    Curd and turd sound way tooooo similar. Anyway, my brother-in-law is from New Hampshire and introduced me to poutine. Magically (all the way here in Southern California) cheddar cheese curds started showing up in the deli section of my local grocery store so I can now make poutine at home. Best bar meal/snack ever. I can’t believe it isn’t more popular.

    We just call that chips cheese and gravy over here in England 😊😊 Works well with baked beans instead of the gravy too.

    the way i make poutine at home is just like this
    but i deep fry my fries in either vegetable oil or crisco shortening or both, and also use both franco american gravy (campbells gravy if your american) and swiss chalet gravy mix
    i also use shredded mozzarella and also cook bacon to put on top
    for that authentic restaurant/bar feel

    it is funny because we need to pronounce Poutine the french way, because it was made in Québec, but originally, it seems that the word came from the english word Pudding ! 😅

    I’m British and I’ve never heard of Poutine. I’m wondering what’s in the gravy recipe. I like chips (French fries) and mayonnaise, but not with gravy. 🥴

    In a real good original Quebec poutine you want to use fresh curds. If they are good quality and fresh, they won’t melt easily and they will « skouik » on your teeth.

    The cheese curds should only be about 5% melted. Otherwise it won't squeak.

    I cheat and use shredded cheese... they don't sell cheese curds at Shoppers Drug Mart but they sell french fries and gravy and it's close to my house. Pandemic Poutine.

    It looks a bit unhealthy with all the fatty stuff, not my thing but many I'll try it just to broaden my view and taste. You've got something more healthy Canadian cuisine?
