- This recipe can be scaled down for one-gallon, but we brew it up as 5-gallons in this video! This cinnamon-inspired cream soda mead balances slight warm spice and heavy vanilla alongside a pop of phosphoric acid to create a lovely, crushable, session mead experience. Enjoy!

Love the creativity here, especially in a session mead. Yum!! I will need to play with phosphoric acid for a future mead. I need to make a rootbeer session bochet mead at some point
I have made a root beer session before, and plan to return to it eventually. I actually found my spices for it while I was cleaning this afternoon! Let me know how yours goes. 🍻
This looks awesome. Out of curiosity, did any of your test batches use a different cinnamon balance? Wondering what this would be like with just Ceylon. Do you think the cassia is mandatory?
I don’t necessarily know that it’s mandatory. But in all the prep research I did beforehand, this is the ratio that got recommended the most from what I saw. That’s all anecdotal, though, and, of course, the cinnamon is a background character, not in the forefront.

Just a guess: cinnamon is tree bark, tree bark has tannins, tannins help with clarity.
That was definitely my speculation. And I posted about this in our members only Discord channel, but it’s interesting that it seems to have cleared better when I switched from sweet clover honey to wildflower honey.
