The studio did follow the manga's style it's just that the author's art changed and improved over the years. Also as someone above me said Rin gets the white hair way later on so that's not something the studio changed. If we keep getting new seasons after s3 then anime onlyes will see white haired Rin around s5.
Rin is kinda split up in 2 personalities and the White hair represents the demon Rin aka Rinka while the dark haired Rin is the human side there’s kinda an arc on Rin learning how to control his demon self Rinka in order to reach his full potential from what I remember.
