  • 马来西亚民间美食咖喱排骨🐷香浓的咖喱汁,软嫩入味,超好吃,不知不觉又要多吃一碗饭❤️
    材料:500克排骨、2勺咖喱粉、2颗马铃薯、1把咖喱叶、3根香茅、1000毫升清水、200毫升淡奶、半勺盐、1勺白糖
    辣椒泥:20条干辣椒、6条红辣椒、5瓣蒜、10红葱头、20克黄姜、20克南姜、7粒石古仔、10克belacan
    1)把排骨清洗干净,加入2勺咖喱粉拌匀腌制15分钟
    2)把20条干辣椒、6条红辣椒、5瓣蒜、10红葱头、20克黄姜、20克南姜、7粒石古仔、10克belacan搅成泥备用
    3)热锅热油,把切好的马铃薯炸至稍微金黄色捞出
    4)锅留底油,把辣椒泥倒入炒15-20分钟,变深红色,把腌制好的排骨、香茅&咖喱叶、马铃薯加进来炒均匀
    5)这时就可以倒入1000毫升清水&200毫升淡奶搅拌均匀,开大火煮开再关小火盖上盖子焖40分钟
    6)最后加入半勺盐&1勺白糖搅均匀就好了

    1) Clean the pork ribs, add 2 spoons of curry powder, mix well and marinate for 15 minutes
    2) Mix 20 dried chilies, 6 red chilies, 5 cloves of garlic, 10 shallots, 20 grams of turmeric, 20 grams of galangal, 7 pieces of candlenuts, and 10 grams of belacan and set aside
    3) Heat oil in a hot wok, fry the sliced ​​potatoes until slightly golden brown and take out
    4) Leave the oil in the pot, pour in the chili paste and fry for 15-20 minutes until it turns dark red, add the marinated pork ribs, lemongrass & curry leaves, and potatoes and fry evenly
    5) At this time, pour in 1000ml of water & 200ml of evaporated milk, stir well, turn on high heat and bring to a boil, then turn to low heat and cover with lid and simmer for 40 minutes
    6) Finally add half a spoon of salt & 1 spoon of sugar and mix well

    你用的塑膠鏟不適合放在滾熱的油中~會熔化有毒素。凡是有熱度的煮食都用金屬的餐具,安全不損害健康。

    Malaysian normally use coconut milk. Only some use fresh milk ( less fat ).
