To not have the fuel problem you just gotta change the fuel draining to something else from irl, though you can just open up a new profile and mod it over there, it can go high enough speeds and be modified every way you'd like it to be.

I installed the mod but I can't go over 56mph, I've already disabled the speed limiter and still I can't go over 56mph, any ideas?
Me too I think it doesn’t have automatic gear change so that’s why if you shift gears you might be able to go over than that plus it only has 4 gears

Crashed at loading screen, horrible car mod
For me it worked, aside from the AE86 mod. But i think that this is just a bug that needs to be fixed hopefully.
