  • We're eating the ORIGINAL pork bone (tonkotsu) ramen! Let's just say it's not exactly what I expected. In addition to this historical bowl, we're visiting 3 other top-notch ramen shops in Kurume City, Fukuoka. Kurume isn't know for a whole lot...but it is for ramen - a heavier, more pungent tonkotsu ramen too.

    I am always impressed with your knowledge and enthusiasm when it comes to everything RAMEN. Also your ambition to walk miles and miles in the heat of the day or in freezing weather to showcase these restaurants. You even took the time to share details of the Ramen if it was not very good. Frank, you are a Ramen legend 🙏. Your editing is also very impressive. I purchased your Fukuoka Ramen Guide , although I hope to someday put it to good use.

      I would book a Ramen tour with you more than anything before using those guide books. But , happy to add more tour books to my collections. You can climb mountains Frank. I am sure there are some Ramen up in some of those mountain tops😁 . 🗻@@5AMRamen

    Love the video Frank, there are barely any videos on Kyshu out here on youtube, ramen even less. I love Kyushu history since I played Samurai Warriors, the Shimazu were the coolest, lol.
    (Also, I hate you for the Discord sounds, I thought something I was going on with my PC, just kidding 😂)

      Kyushu needs to be shown more love, for sure! Love the Shimazu reference and that you played Samurai Warriors 😊

    The Nankin in Nankin Senryo is 南京 meaning southern capital. These are also the characters used for the Chinese city of Nanjing/Nanking. I do not know if there is any connection to Mainland Asia but we all know that there are links with a common name for ramen being Chuka Soba 中華そば China Soba.

      Yes indeed - given the Chinese roots of ramen, you sometimes see Chinese cities used in the names of these older ramen shops. The owner is from Nagasaki and Nagasaki's Chinatown is called 南京町.

    I was just about to comment, that you should have a guide with all that valuable information you're gathering along your ramen adventures... And I was happy to find out you already have one!
    Now I wonder, when you will get an anime/manga character, based on you? This would truly be a cornerstone, marking your integration into the Japanese culture - where "if you're not an anime character, you don't exist!" ^_-

    Great video! I love tonkotsu style. If I remember from a previous review, you said you were more a shio guy. Was the heaviness of tonkotsu hard to eat repeatedly? I'm curious how you find out about these places. Do you use mainly tabelog? Is there a secret ramen connoisseur discord out there? (if not, you should definitely make a 5amramen server. I'd love to be in a ramen group!)

      Kurume is your ramen spirit city 😊. I am indeed more of a lighter ramen guy and shio is probably my favorite style. But when in Fukuoka, I wouldn't have it any other way - tonkotsu every day, all day.
      I use Tabelog, Ramen Database (like a Tabelog but just for ramen), and Google (although more for directions). No such discord that I'm aware of, haha. Please join if I ever do set one up!

    Is there a reason why every area have their own style of ramen? Is it because they want to stick out or is it because of local ingredients? It's really interesting

      It can often be both! Furthermore, surroundings can influence the ramen too - heavier or saltier ramen styles often pop up where there are more laborers, or where the temperature is colder, for example.

      It's harder to find in Tokyo but here are some (both Kurume style tonkotsu):

      - not sure how good they are though as I've never been.
      Bario is a chain that does Jiro style ramen but they also do Yobimodoshi!

      Kurume ramen (featured in the video) is on the heavier side. I'd recommend lighter ramen, like shio (salt seasoned) or shoyu (soy sauce seasoned).
