  • Canning Tomatoes. It's time to preserve your harvest. This stewed tomatoes recipe is a huge hit on the Wilderstead. This is our method of canning whole tomatoes. In this video, I show how to can whole tomatoes using a water bath method. In our house, its hard to go a couple of days without a meal that contains tomatoes. They're such a versatile vegetable. Pasta sauce, chilli, stew...the list could go on and on! Each year we try to grow enough tomatoes to can, with the hopes of having enough to last us until harvest begins next summer. This stewed tomato recipe packs just enough sweetness and a hint of savoury flavour to be be used in just about any recipe you would need tomatoes for.

    Is that a t fal pressure canner? Do you have any issues using it on a propane burner?

      It’s a presto 23qt canner. No issues using the propane so far.

    Are those quart jars? Can you use 5% vinegar or citric acid in place of lemon juice?

    Nice work! There are new canning rules as of 2015. If your water bath processing time is greater than 10 minutes you longer need to boil/sterilize your jars anymore! Huge time saver. I still pour boiling water over them so they are hot when I'm packing them, but no more boiling.

      Place clean jars in oven 220 degrees for 20”....that easy

      @@colleenpritchett6914 Most of the canning jar companies have reduced the quality of their glass. They can no longer stand the change from dry to wet heat. I had to call Bernardin when I had multiple jars explode in the canner a few years back. That is what they told me. They no longer use tempered glass (ie reduced glass quality) and to not sterilize using the oven.

      @@colleenpritchett6914 I don't think their more expensive jars were subject to this change (the ones designed for freezing - wide mouth). But their narrow mouthed jars (like Golden Harvest) definitely cannot be put in the oven anymore. Found out the hard way!

    To help with the skinning process prick each Tom with a fork and the. Put them in the hot water it takes much less time.

    I thought it was only aluminum that was an issue,I haven’t noticed anything when using my stainless pot.

      Yes, it’s mainly aluminium cookware that causes problems. But with cheap cookware that claims to be stainless, you never know what other metals might be in the mix. Especially with products made in China, etc.

    Nice simple recipe, might be worth a try. But I gotta disagree with you on plastic vs stainless steel! Now Aluminium, that certainly leaves a metallic taste!

      Oak Knob Farm funny thing - we actually gave away something like 200 canning jars when we moved from Manitoba to here. And we still have too many! (I hope!)

    Thanks for sharing this, Dave! I have always been a bit terrified of doing tomatoes. I usually froze them but everything goes in the freezer and then never comes out again! :P I made tomatoe sauce a couple years ago but the work didn’t balance out with the production. Stewed tomatoes are the best. I may give this a go. Small batch anyway

    Great job Dave. Good to see you. That's quite a haul of tomatoes. We're finally getting some sunny weather and should have a fair amount of tomatoes in a week or so. We have a couple basil plants also. I really want to try this recipe. Stewed tomatoes are so nice to have in the pantry. Thanks for the info!

      @@Wilderstead Oh yeah! We really want to get to the point where we are canning more. Gin has been canning with her mom for the past few weeks and learning the ropes. I'm really hoping that we have enough tomatoes soon to try the recipe and method that you showed. We need to step our gardening game also. Going to invest in a better light system to get seedlings going and get the beds covered with manure to winter over.
