Correct me if i'm wrong, i'm new to theory. From what i'm gathering modes are used for tone shifting, the song was still recognizable moving between the CM modes, but they each had a different feel. But switching the key would do something else. For example, If you were to play the same rhythm of "over the rainbow" in GM the song would be unrecognizable right?

Good question! If the song was played in GM, it would still be recognizable, because all you're doing is transposing the song by a fifth (from C to G). In general, a song will still be recognizable if the relative intervals between the notes stays the same. For example, you can transpose the entire song up by one octave and it will still be recognizable. Hope that helps!
