    **************** Meethi Mathri Recipe*************
    INGREDIENTS:-
    -2 cup Flour (350 grams)
    -¼ cup Ghee
    -1 cup Sugar
    -Oil for frying
    Method:-
    -Firstly, let’s prepare dough for Mathri, Take a wide bowl add Flour and ghee. Mix them well. Ghee’s proportion should be just enough that flour must hold to shape like this.
    - Add water little by little and knead stiff Pudi like dough. Upto ¼ cup water has been used to knead dough. Swipe some ghee in your hands and knead for 2 minutes. Cover and rest for 20 minutes.
    -After 20 minutes make equal sized balls. Make medium balls and flatten them. Once all balls are prepared roll thick Mathris. Make cuts using knife both the sides so that it does not puff up while frying.
    -Once all Mathris are rolled fry them on slow flame. Press using skimmer so that they do not puff up. Fry till Mathris are brown from both the sides .It takes around 8-10 minutes to completely fry Mathris.
    -Once all Mathris are fried. Prepare Sugar syrup. Add 1 cup Sugar & ½ cup water in a heavy bottom pan. Let the sugar melt and after that cook till you get 2-2.5 string in syrup.
    -Now dip fried Mathris in Sugar Syrup. Make sure you dip Mathris in Sugar syrup while it’s hot. Coat Syrup on both the sides then take them out.
    -Pour remaining Syrup over Mathris. Garnish with Pistachio slices. Allow it to set for 15-20 minutes on room temperature. After 15 minutes sugar syrup has set on Mathris. Mathris are ready to eat!!
