How To Fix Sour Espresso with Perfect Puck Prep

  • If your espresso starts in drips but finishes too fast, you might be getting channelling caused by bad puck prep. Just tamping isn't good enough anymore with more delicate and lighter roasted coffees, so here are a few things I do to get MUCH better espresso with just a few inexpensive steps.

    When using puck screen, make sure you reduce the dosage by 1g, recalibrate your distributor so that when you place the puck screen onto the portafilter, it will not touch the group head.

    My espresso is acid every single shot, i tried more than 4 tipes of coffee, i use all of the accessories for the puck and use the machine's grinder and a hand grinder to test and every shot is acid, tried to chenge the dose between 18g to 20g... What are your hints for that?

    Sprometheus did a comparative test on extraction levels between tapping, wdt and using and OCD distro .
    Simple horizontal and vertical tapping came out tops

    something important to mention is with a regular tamper you need to make sure your not tamping at an angle at all if your technique is sloppy one day the puck is slanted it just goes through the side with less coffee thats why i feel like a palm tamper is just better cause it's impossible to do that and you are causing less strain on your hands and elbow

      I thought a spring loaded tamper for this reason. I'm hoping it works, but I've noticed myself having uneven tamps

      @@justSomeUserOnYT Spring loaded are good for consistency of tamp pressure, but you still gotta make sure it's level 😉

    Hey Charlie, I've found that if I set my distribution tool to the proper depth I don't need to use a tamper. Have you tried that?

      I have! I used to do that and even ground finer cos I didn't have to tamp. It isn't necessarily just better, but really a different way to pull a shot that can balance out sourness especially in lighter roasts. If it works for you, go for it

    I agree, proper consistent puck prep is important. A dimmer switch (easy upgrade) can fix a bad grind, even a bad puck. Water quality matters too. I set my distributor to 6mm deep and the tamper side 10mm deep. That keeps the prep consistent, and the puck off the shower head.     I see your tamper has a curved bottom. Any particular reason?

      I think when I was just starting I heard that curved bottom tampers encouraged less channelling. Not sure if it's true or even how to test that, but I'm looking to get a new tamper when I find one I like the look of

    Re wdt - don’t use sewing needles as they’re too thick, acupuncture needles are much better - i have tried both and normal needles actually create channels.

    Yeh go on I'll sub until you do something I disapprove of, I'll let the WDT thing go for now as I drew the line there due to my local climatic considerations that render WDT not only useless but detrimental.
    Let's hope CDT doesn't catch on because over tamping is bad, really really bad, we need to make more of a thing about it as I'm starting to think that's the biggest cause of poor pucks for beginners, I'm barely using enough pressure to squash a strawberry now, and when my brain says that's crazy, you're clearly an idiot I tamp harder, the puck always lifts off the bottom and sticks to the screen and I revert back to abusing small fruit.
