My mom used to make tons of Pasties for deer hunting season. We live in MN and I always thought this was a Finnish dish but it looks like it originally came from Cornwall and was created for the Miners who ate them for their lunch. Nice work!
From a gut feeling I would say pasties (how they are called in Britain) are English.

Did you know that English miners settled in mountains around Mexico City and Pastes are very common there but they had to fill them with other dishes because not all of the original ingredients were available.
So like fusion cuisine English/mexican.
Cornish miners have taken their skills all over the world they wouldn't be happy then or now to be called English though

What is a great substitute for lard(pork fat). Hot water crust is something I need to practice making. Tfs
I use a mixture of coconut oil and vegetarian butter in place of lard.
I have also used ghee

One time I made these with turkey bone broth and the fat from that instead of water and lard and that crust was AMAZING! But I used the recipe you have on your blog and it’s so good! I had rutabagas from my garden and everything. I think I’ll make them half the size next time because they’re so hearty and like 1k calories each when all is said and done! The smaller ones I think would be great for taking to go! These big ones are good for a very big dinner or something though!

I make beef ones like a chicken pot pie. Except, I use beef, (cut into bite size pieces) potatoes, mushrooms and onions. My friend's Serbian grandmother taught her and we'd also make them as teenagers. We're still friends and I always send her a picture whenever I make it.

G'day as a pasty maker - it is normally puff pastry, not shortcrust pastry. Hot water pastry is too heavy. If you want to keep them together and not guess what is inside of them. Try adding poppy seeds on top (egg wash) of the veggie pasties and leave the meat ones with nothing on top but the egg wash.
PS Aww I think you are trying to make Cornish Pasties. Yep, it is shortcrust but I still use puff pastry. You don't need to knot the edges. I just wet the edges and stick them together. Just an option. It takes practice.
You can make them however you want. Pasties are just pastry with a filling. I have had lots of pasties and every country has something similar but with a different name. England didn't invent them, only Cornish pasties. I use to live in Australia and had pasties there too with flakey pastry.
@51Saffron Yes, I understand that, and I am not British. I am just suggesting it would probably taste a little better and lighter with Flaky pastry, eg, Puff pastry or Scotch Puff Pastry. As for the topping of the pasty, it is to identify them if not eaten straight away. Another suggestion you could add inside cheese and even bacon pieces. I use hot water pastry for my pies sometimes because making shortcrust is a pain, or I just buy it. Thank you.

I made my Patsy's they came out great but lol 😆 I'm the only one that eats them so I took them to my second job and they loved them. Just glad I made them tasty. Well next time a smaller amount at home to make.

It should absolutely work and also make your pastry extremely tasty I wouldn't put a sweet filling inside... the only difference between lard and tallow is the type of animal it comes from, tallow specifically coming from a ruminant animal whereas lard is usually from a pig

I grew up with pasties (sorry not a fan of the cornish variety and not common here) and ours, homemade and commercial have/had potato, onion, carrot, pumpkin, pepper and either beef or lamb or a combo of both and seasonings. Oh I'm Australian.
