A personal example of this I can provide is that at my job we use walkie-talkies. If I use the radio on this while I am nearby the electronic weight scales or thermometers it will cause the readings on those devices to quickly start jumping up and down until I stop using the radio, and this is despite the fact those scales and thermometers don't have any wireless capabilities themselves to my knowledge. So, cram a tube full of assorted devices each broadcasting over a number of different signals and at different strengths, there rises the rare risk that it may cause issues with the plane. So airplane mode disables your device from sending or receiving any of those signals, no cell, no Bluetooth, no wifi, to maintain the lowest risk chance of any possible interference.
