Best Mushroom Recipe - from Greece

  • This is the best mushroom recipe I've found. And when you are in Mykonos, Funky kitchen is a must do!
    Mushroom recipe (first one):
    6-7 large mushrooms any type we like but the most common is the button mushrooms finely sliced
    1 cup olive oil
    1 teaspoon of dry thyme
    1 teaspoon of dry coriander
    1 teaspoon of dry oregano
    1 teaspoon of dry or fresh rosemary
    1-2 garlic cloves finely diced
    1 cup white dry wine
    A pinch of both salt and pepper

    In a heavy bottomed pan, heat the olive oil and when steaming hot put the mushrooms and the herbs and let cook without interfering too much, just the occasional stir like in the video.
    Once cooked add the wine and the garlic and salt and pepper. Continue to stir and serve warm.
    For the creamy mushrooms just add a cup of fresh cream at the end and simmer until the sauce is thick.
    A great combination for the plain mushrooms is a poached egg on top.
    For the creamy mushrooms, I would recommend a pasta like rigatoni or tortellini or even some rice to go with it.

    I absolutely trust this guys cooking. The Greeks can throw down in the kitchen. If he says to cook the olive oil on high heat you do it.

    Thank you! Brilliant sauce to have with macaroni or rice or just by itself. I'll go out shopping and make it for my brother for when he comes home from work, as it looks easy enough to cook.

      We enjoyed it, but I had to use cream milk instead of full cream. But silly me opened a tin of rice pudding and tin of peaches at my brother's home now have tummy ache. I will make my own rice-pudding from here on.

      I agree health is as much about what not to eat as what's best to eat. I saw a Christian friend yesterday at the supermarket. I bought mostly organic as I like the old fashion natural taste. She told me she has rare condition that effects her memory but I don't recall what she said it was, something to do with the brain and epilepsy. Then I saw things she was buying lots of processed foods margarine and so on. I mentioned margarine is unhealthy, that there are many good You Tube channels concerning health and nutrition. I also told her about herb book she said she would look up by Maria Treben, and recommended "Swedish Bitters" to her which no doubt you will have heard of. It's not nice to see old friends even family members poorly with severe health conditions that can easily be avoided, through healthy life styles...Mushrooms I bought were organic chestnut, never had them before, tasted nutty.

      Wow, good thing you saw her, ha? I hope she didn't buy that margarine, ugh I can't believe they still sell that poison. Those mushrooms sound good, I don't know those. Good stuff brother!

    looks amazing, but didn't you advice to not fry your food with virgin olive oil, especially not at the smoke point due to the oil truning rancid?

      Yes, but I'm not about to be disrespectful to a chef that is nice enough to invite me into his restaurant. When I make it myself I use coconut oil and don't go to the smoke point.
