I am by no means at all an expert at this, or even good enough to show on TH-cam. But one thing i noticed was some time management things. for example right around 22:03 you had a customer eating a blue fish with the table next to it wanting a blue and a pink fish. the customer eating finished and left, and you stood watching/waiting for the blue fish to finish cooking. You had the safety hob and the blue fish are slow anyway. You had time you could have washed the plate from the customer while the blue fish was cooking and done 2 things at the same time (cooking and dishes) that one instant was only a couple of seconds, but that kind of thing i would think adds up. It might help a little, especially if you have safety hobs or the microwave to do other things while waiting for the cooking (or the eating or whatever)
