  • How To Make Easy Chicken Floss Buns | BreadTalk Style | Pinoy
    TOTAL TIME
    Dough Preparation: 20 minutes + rising
    Chicken Floss: 1 hour and 25 minutes
    Water Roux: 5 minutes
    Bake: 20 minutes
    MAKES
    10 Chicken Floss Buns
    INGREDIENTS:
    3 cups water, for boiling
    240 grams chicken fillet
    3 cloves garlic
    3 small slices ginger
    1 scallion
    1 tablespoon soy sauce
    1 tablespoon oyster sauce
    1 tablespoon brown sugar
    1 teaspoon paprika
    2 tablespoon olive oil
    120 ml water, room temperature
    2 ½ tablespoon flour, used for roux
    3 ¼ cups all purpose flour
    1/4 cup white sugar
    2 teaspoon active dry yeast
    1 teaspoon salt
    2 tablespoon milk powder
    1 large egg, for dough
    ⅓ cup unsalted butter, melted
    1 cup fresh milk, warm
    1 large egg, for egg wash
    1 teaspoon fresh milk, for egg wash
    cream cheese spread, your choice
    DIRECTIONS
    *Buns are extremely soft due to the addition of water roux.
    **Egg wash is a mixture of 1 large egg and 1 teaspoon of fresh milk
    1. In a medium high heat, boil chicken breast, garlic, ginger, scallion and water in a pot. Uncover and cook for 30 minutes or until water is reduced.
    2. Reduce heat to simmer, remove garlic, ginger and scallion. Using a spoon or fork, shred chicken into thin slices.
    3. Turn to low heat, add soy sauce, oyster sauce, sugar, paprika, and olive oil. Mix until homogeneous in color. Stir until dry for about 10 minutes. Continue to stir and toss until dry and toasty, about 30~45 minutes. Set aside.
    4. Make a water roux; In a small saucepan, dissolve 2 ½ tablespoon of all purpose flour to 120 ml water. Cook in low heat, stir continuously to remove lumps and transform the flour into smooth paste. Set aside
    5. In a large bowl, add flour, water roux, sugar, yeast, salt, milk powder and egg. Stir, add butter and warm milk. Mix until well combined.
    6. Lightly flour surface; knead for 7~10 mins. Grease bowl and dough. Cover and let rise in a warm place for about 1 hour or until doubled.
    7. Punch down dough; shape to a log and cut into 10. Using a rolling pin, roll and shape to oval. Move to a greased pan or with a baking sheet. Cover and let rise for about 40 mins or until doubled.
    8. Brush with egg wash. Bake to a preheated oven at 175°C / 347°F for 20 minutes or until golden brown. Let it cool.
    9. Place a spread, then scatter floss on top of the bun using your hand.
    10. Serve and enjoy!

    Won't the salt kill the yeast if you put it directly?

      Hi! No, small amounts will only slows down yeast fermentation but too much will.

    Hello po. Can i use instant dry yeast instead of active yeast? Same amount po ba? Thanks in advance.

      At room temp normally last for 3 days but if you keep them on freezer they'll last longer. Microwave them before serving. Thank you for your comment.

      No u can't u use cake flour.. it gives a cake taste to a bun
