Hello mam, Kanda batata poha is made without urad dal. To keep poha moist, after the dish is ready, sprinkle water and cover the pan with a lid and cook on low flame for a few minutes. The steam inside will keep poha soft and the dish will get a even yellow color too. Lastly, poha is incomplete without lots of coriander leaves and a lemon wedge.
